Hershey's Brownies

1 cup butter (use the real stuff)
2 cups sugar
4 eggs
2 teaspoons vanilla
3/4 cup hershey's cocoa powder
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped walnuts (optional, I do not use)
Icing
1 cup confectioners' sugar
3 tablespoons cocoa powder
1 tablespoon melted butter
2 tablespoons warm water

For brownies heat oven to 350 degrees. Spray a 9x13 pan with non stick cooking spray.
In large microwave safe bowl place butter and microwave until melted.
Stir in sugar and vanilla.
Add eggs one at a time, hand beating well with spoon after each addition.
Add cocoa; beat until well blended.
Add flour, baking powder and salt; beat well.
Stir in nuts if desired.
Pour batter into prepared pan and bake for 30 - 35 minutes (I underbake mine for 25 minutes).
Drop icing on hot brownies and spread with a rubber spatula as icing melts. Cool completely and cut into bars.
For icing. Melt butter then wisk in the cocoa, butter and powder sugar. Icing will be thick but will melt when placed on hot brownies and make like a thin chocolate coating. The brownies are still good without the icing but what the heck, go for it!

Double Chocolate Brownie

1/4 cup butter
3/4 cup sugar
1 teaspoon vanilla
1/4 cup corn syrup
2 eggs
2 ounces unsweetened chocolate, melted and cooled
1 cup all-purpose flour, sift before measuring
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cup chocolate chips
1/2 cup chopped pecans or walnuts, always an option

Cream together butter and sugar until fluffy. Add vanilla and syrup and continue beating. Beat in eggs and cooled chocolate. Into a separate bowl, sift dry ingredients. Stir dry ingredients into the batter. Fold in chocolate chips and pecans. Spread brownie mixture into a greased and floured 9-inch square baking pan; bake at 350° for 20 to 25 minutes. Cut brownies into bars.

1/2 cup boiling water
2 cups granulated sugar
2 eggs, lightly beaten
1 1/3 cups all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup coarsely chopped walnuts or pecans
2 cups (12 ounces) semisweet chocolate chips

PREPARATION

Directions for chocolate brownies
In a large bowl, combine cocoa and baking soda; blend in 1/3 cup melted butter. Add boiling water; stir until well blended. Stir in sugar, beaten eggs and remaining 1/3 cup butter.

Stir in flour and salt. Stir nuts and the chocolate chips into chocolate brownies batter. Pour chocolate brownie batter into a greased 13x9x2-inch baking pan. Bake at 350° for 35 to 40 minutes or until chocolate brownies are firm and begin to pull away from sides of pan. Cool before cutting into squares.

Basic Brownies:

1 cup butter or margarine
4 (1-ounce) squares unsweetened chocolate
4 large eggs
2 cups sugar
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups chopped walnuts or pecans (optional)
Créme De Menthe Frosting
Chocolate Glaze

Microwave butter and chocolate squares in a 1-quart microwave-safe bowl at HIGH 2 minutes or until both are melted, stirring once.

Beat eggs at medium speed with an electric mixer; gradually add sugar, beating well.

Add flour, salt, and vanilla, beating well. Stir in chocolate mixture, and, if desired, chopped walnuts. Pour batter into a lightly greased 13- x 9-inch pan.

Bake at 325° for 40 to 45 minutes. Cool in pan on a wire rack. Spread with frosting, if desired, and cut into squares.

Raspberry Brownies: Fold 1 cup fresh raspberries into Basic Brownies batter; pour into pan. Melt 1/2 cup raspberry jam; drizzle over batter, and swirl with a knife. Bake as directed. Sprinkle with sifted powdered sugar; cut into squares. Garnish with fresh raspberrries and raspberry leaves, if desired.

NOTE: For added interest, stir 1 cup of any of the following ingredients into Basic Brownie batter: butterscotch, peanut butter, semisweet or white chocolate morsels; candy-coated chocolate pieces; chopped candy bars or caramels; almond brickle chips; dried cherries. Bake as directed.

Yield: Makes 2 1/2 dozen

CHEESECAKE BROWNIES

Step 1:
1 box chocolate cake mix
1 stick margarine
1 egg
Mix together. (It will be crumbly) and press into a lightly greased cake pan.

Step 2:
1 box (1 lb) powdered sugar
1 - 8 oz cream cheese, softened
3 eggs
Beat thoroughly until smooth and creamy. Pour over cake mixture.

Step 3:
Bake at 350 for about 45 minutes or until a toothpick inserted in the center comes out clean.

Cool and serve.

This is easy to make and everyone loves it.
**Also if you want to make "Blondies" you can use a yellow cake mix instead of choclate.
