I am still trying to figure out a nice meal (NOT BAKED CHICKEN) to serve my guests that is filling, pleasing to the eye and not too terribly expensive. I was thinking about having a southern-style menu but really haven't figured that out quite yet- what did you feed your guests? (or will be)

I had a Mexican buffet. Everyone loved it!

We are having are catered-
1. chicken dish- not sure yet....
2. Roast beef
3. Pasta in asparagus in a wine sauce.
4. Breads- all kinds
5. Vegetables - 2 kinds
6. Starch- Potatoes- those little roasted ones.
7. OPEN BAR- the most important!
8. Coffee and Cookies
9. Cake

What every you do- just have lots of choice and think about if you have people with special eating needs going... like not everyone eats red meat or meat for that matter... but just having chicken looks really cheap. I hate going to weddings where I have no choices.

Well you can really serve what ever you want. Let's see we had roast beef and chicken with ham and cheese inside. We had a salad, rolls, baked fruit, and mashed potatoes. It was all really good. You can serve whatever you want to have for dinner. This is all up to you. Caterer's charge by how many meats 1, 2, or 3. Then how many servers they need. If you have a sit down meal they will need more then just buffet style.

I will probably go with salmon and a chicken dish - but I'm going to be careful to chose a very different chicken dish. The reason I'm doing that is because not everyone likes fish, and I don't want to serve salmon and beef, because then the people who don't like fish or don't eat red meat will be very disappointed. Even though chicken is so over played at events like this, consider the reason that it is: there are a gazillion ways to cook it, most everyone eats it, and it's cheap. Don't settle on an ordinary chicken dish if you want to go with chicken...choose something or consult with the chef about something that will tickle your guests' tastebuds.

We had an open bar and veggie and fruit appetizers during the cocktail hour. The first course was a garden salad with Italian dressing. The main course was chicken penne in a cream sauce with tomatoes and artichoke hearts. The dessert, instead of cake, was apple pie. It was very reasonably priced and delicious. I think everyone enjoyed eating something other than baked chicken.

It all depends on where you are having the wedding at. Mine was in a hall, so we got to pick the menu. We decided on a family-style dinner. We had chicken, roast beef, polish and italian sausage in saurkraut. Our veggies were green beans, and we had a salad, and bread and butter. Also, there was mostaccoli and meatballs. That way everyone had a nice variety to choose from. Our plates were $22 each, and that included an open bar.

We are going to have a choice between sun-dried tomato chicken with an arugula salad, green beans and wild rice or a vegan pasta dish with vegetables, Cesar salad, and broiled tomatoes. Ours is about $11 a head.

Our cake will be a combination of chocolate with strawberry filling and vanilla butter cream and then white cake with lemon filling. It will be about $1.50 a slice.

What my friends did was have a local BBQing company come in a do baked beans, cornbread, pulled pork sandwiches, and slaw and it was a big hit!

i am getting married in Oct 07. we are getting married at a catering hall and our guests have a choice of 6 different entree
dishes ranging from fish,chicken,beef,pork,duck and vegetarian.also with dinner we have an appetizer,salad and bread.we are also having a cocktail hour with hors d'oeurres,a cold and hot display,carving board,pasta station. and then desert which includes,cake,miniature pastries,chocolate covered strawberries,petite fours,and a candy buffet. each plate is 95.00 per person. CONGRATS!!!

1 hour cocktail hour with open bar and about 800-1000 appetizers (hot & cold) + chocolate fountain.

For the reception, we're having a sit down dinner with the following:

Penne pasta w/marina sauce (1st course)
House salad (2nd course)
String beans w/baby carrots
garlic roasted mashed potatoes
choice of one of the following:
Boneless breast of chicken
Prime Rib
Pasta primavera
Wedding cake w/ice cream and berries (dessert)

It's about $40pp for the meal alone. Appetizers are going to be about $11pp, cake about $3pp, chocolate fountain about $3pp and open bar about $10pp so the total cost per person would be about $67pp.

We had stuffed chicken breast, beef tips & noodles, vegetable medley (which was supposed to have been green bean casserole), buttered corn, scalloped potatoes, salad, and homemade bread.. plus the wedding cake, tons of cookies, chips, coffee, punch, beer, and wine.. Oh and we had a chocolate fountain, too.. Everyone seemed to enjoy everything.

Mine was outdoors a year ago June. I had bought some pork loin roasts, and also picked up some inexpensive turkey breast and I had some relatives and friends pitch in on other things, like some egg rolls and crab rangoons, and side dishes, and lots and lots of wine!!
