putting it in the fridge causes the sugar to crystal up - called granulation. it probably won't actually hurt it, bc if you heat the honey it will return to it's liquid form, but it is fine out of the fridge.
did you know, btw, that honey is the only food that doesn't spoil?

Beehives (where honey is made) are maintained and live at temperatures of 100+. I hope that your refrigerator isn't that hot - but, once the temperature of the honey's atmosphere drops, the sugar in the honey crystalizes. If or when this happens, it's always best to return the honey back to its natural state by slowly heating in a warm water bath - using a microwave is not good for honey. (As a honey aside, one should never give honey to children under the age of two because of the potential for botulism.)

You can only do it very briefly if you want some cold honey on something but only in small amounts and just before you use it.
It will make it go hard and it will crystallize and have a texture like somebody put a load of sugar in with it. It also loses that honey taste.
It's best at room temperature.

I'm not 100% sure if this is the main reason, but honey gets really hard in the refrigerator, ergo making it harder to manage. But, the bigger issue with honey is to never feed it to an infant under one year of age. I can't remember why, but I know the result of doing so can be fatal!!!

Because the honey gets hard... it won't be usable if it's frozen to the inside of the bottle!

U can keep the honey outside for years .If it is pure it will be in good condition.If u refrigiate the honey looses its taste. It gets hard and you cannot use it in future.

Honey doesn't spoil and is naturally antiseptic.
If you refrigerate it you are changeing the composition and it won't pour or taste the same.

Honey does not have to be refrigerated as it is not perishible. Moreover, if you refrigerate it, it will crystalise.
