Do scratches reduce heat convection?

Specifically, I'm wondering about the pans that aren't non-stick.

Scratches don't reduce heat convection they actually increase it over the scratch.

A scratched cooking pan or pot can cause heat spots that makes the cooking uneven. The scratch creates more surface area so it concentrates the heat at that point. This may not be so bad with soup, but it will be if you are trying to cook eggs or pancakes. The more a pan or pot is scratched, or the deeper the scratch is then the more uneven heating occurs.

No Stick pans are usually made with Teflon and scratched Teflon can be dangerous. I don't recommend that you add Teflon to your diet. Also the gases produced by Teflon aren't healty. If the pan is scratched then that increases the amount of gases produced. You would do better with glass, especially pyrex. It is more stable and naturally smooth.

From a health standpoint, if you scratch Teflon pots and pans, the Teflon will get into the food you eat and can become a carcinogen. You also don't want to wash Teflon pots and pans in the dishwasher under high heat.

It ruins you pans, you could probably ingest some teflon in your food, the food can stick and burn, it would be hard for presenting the food and takes a good chunk of money out of your pocket. Just use plastic utensil's that can with stand a little heat or invest in some good pans. (Calphalon, stainless and or copper which is kinda hard to clean but looks nice.)

I always thought that it was because a lot of pans are coated with a non stick layer and if you scratch off that layer then your food will start sticking.

I've only heard that teflon pots shouldn't be scratched. The coating, if eaten, is thought to be linked to several medical conditions such as Alzheimers. I've never heard that you shouldn't scratch regular stainless steel pots. It would be almost impossible not to.

No, but they are harder to clean & bacteria can get into a crack & stay for a while.
Now, heat may cook it out, but it will always be there, collecting...waiting for you to make one mistake...

oh yeah, don't EVER use teflon...the stuff gets scratched off & into your food. & if you have birds, & overheat your pan...dead bird...since I have 9 of them, I use stainless steel...& only that!

Because food will stick while cooking and it is harder to clean.
