It is a soft, white candy that is spongy in texture. Today's marshmallows are a mixture of corn syrup or sugar, gelatin, gum arabic and flavoring.

Marshmallows used to be made using the sap of the marsh mallow (althea officinalis) for its thickener. The marsh mallow is a plant that grows in salt-marshes, and on banks near large bodies of water. Here is a weblink to a picture of it:

Marshmallows are incredibly cool -- not only do they taste good, but by lighting them you can create a great source of light in a dark campsite!

Technically, marshmallows are a confection -- a candy. They've been around in the form we know them since the mid-1800s.

They are called "marshmallows" because part of the early recipe called for sap from the root of the marshmallow plant.

The marshmallow is a confection that, in its modern form, consists of sugar or corn syrup, beaten egg whites, gelatin that has been pre-softened in water, gum arabic and flavorings, whipped to a spongy consistency.
