Rice making is a skill that a Bengali knows better than anyone. And if she is my mother she knows it the best :). She says, making rice in a pressure cooker is not good as it keeps all the starch within. So, if you take rice mostly, it's always good to cook rice in a open bowl so that you can put some extra water during boiling and throw away the extra water when you feel that rice is cooked. What some do is, after they boil the rice, they filter the extra water using some kind of Plate with pores in it. Some people also find that before cooking, rinsing washes off loose starch, making the rice less sticky. But as far as calorie level is concerned it remains same.
