3 1/4 cup flour
1 1/2 tsp salt
1 tsp nutmeg
2 tsp baking soda
1 tsp cinnamon
3 cup sugar
1 cup Veg. oil
4 eggs beaten
2/3 cup water
2 cup zucchini
1 tsp lemon juice
1 cup walnuts (if you like)
Preheat oven to 350 mix wet ingredients in one bowl and dry in another. Bake in 2 loaf pans for an hour.

Zucchini Bread~
2 2/3 C Sugar
2/3 C Shortening
3 C Shredded Zucchini (2 medium)
2/3 C Water
4 Eggs
3 1/3 C Flour
2 tsp baking soda
1 ½ tsp salt
1 tsp cinnamon
1 tsp ground cloves
2 tsp vanilla
½ tsp baking powder
2/3 c coarsely chopped nuts
2/3 c raisins
Heat oven to 350. Grease bottoms only of two loaf pans. 9X5X3 or three 8 1/2X4 1/2X2 ½. Mix sugar and shortening in a 2 ½ Q bowl. Stir in zucchini water and eggs. . Mix in flour, baking soda, salt and cinnamon, cloves, vanilla and baking powder, stir in nuts and raisins. Pour into pans. Bake 60 to 70 min or until toothpick come out of center clean.

Here's the best!
3 eggs well beaten
2 cups sugar
3tsp vanilla
1 cup oil
2 cups shredded zucchini
3 cups flour
1/2 tsp baking powder
1 tsp salt
1 tsp soda
3 tsps cinnamon
1 cup chopped pecans
1/2 cup raisins
Beat eggs until light and fluffy. Add sugar, vanilla, and oil. Blend well. Stir in zucchini.
Sift together flour, baking powder, salt, soda and cinnamon. Blend with creamed mixtrue. Fold in nuts and raisins.
Turn into 2 regular sized loaf pans or 5 small loaf pans. Bake at 350 for 1 hour. Toothpick test.
This one is the best....trust me....tried and true for over 30 years!

Chocolate Zucchini Bread
1 stick oleo
1/2 cup oil
1 3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup sour cream
4 tbls cocoa
1/2 tsp salt
2 cups grated zucchini
1 cup chopped pecans
1/2 cup semi-sweet chocolate chips
Cream oil, oleo, sugar. Add eggs,vanilla, sour cream. Blend in flour, salt, soda, salt and cocoa. Add zucchini and nuts and blend well. Turn into loaf pans and top with 1/2 cup semi sweet chocolate chips. Bake at 325 for 1 hour.
One of the best chocolate recipes I've ever used and you'd never know it had zucchini in it! Try it and let me know what you think!

Ingredients:

Beat eggs and sugar, add oil and spices, and blend. Add all dry ingredients, flour, and zucchini, and mix. Stir in vanilla. Add nuts and raisins, coated with a little flour. Pour into loaf pans or mini-loaf pans. Bake at 350 degrees for one hour or until done. Makes 2 loaves.

The Party girl recipe sounds like mine. Although I don't add raisins, I do add chocolate chips. Oh my---that is good. My husband doesn't want it any other way now...same with banana bread....spoiled brat! Note: if you use the small pans (great to share with friends and neighbor size), baking time will be 30 mins or so. :>)

2 eggs
1/4 cup oil
1 tsp. vanilla
1/2 cup firmly packed brown sugar
1 cup loosely packed shredded zucchini (about 1 medium zucchini)
1 cup POST SELECTS GREAT GRAINS Raisins, Dates, Pecans Whole Grain Cereal
3/4 cup flour
1 tsp. CALUMET Baking Powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 cup PLANTERS Pecan Pieces
PREHEAT oven to 350°F.
Beat eggs, oil and vanilla in large bowl with wire whisk until well blended. Stir in sugar. Add zucchini and cereal; mix well. Let stand 5 min.
Combine flour, baking powder, cinnamon, salt and pecans. Add to cereal mixture; stir just until moistened.
SPREAD into 8x4-inch baking pan sprayed with cooking spray.
BAKE 55 min. to 1 hour or until toothpick inserted in center comes out clean.
Cool 10 min. in pan; remove from pan to wire rack. Cool completely. Cut into 14 slices to serve. YUM-O! : )
