Pancakes with Apples & Cinnamon
1 c. pancake mix (12 to 14 pancakes)
1 c. milk
1 egg
1 tsp. cinnamon
1/2 c. peeled apples
1 tbsp. vegetable oil
1/4 tsp. vanilla extract
Combine milk, egg, cinnamon, apples, vegetable oil and vanilla extract into the pancake mix. Stir approximately for 2 minutes until everything is combined smoothly. Pour into buttered saucepan and turn the pancakes over once you see the edges slightly brown and flip over once again.
Apple Zucchini Cake
4 lg. eggs
1 c. vegetable oil
2 c. sugar
2 c. peeled and grated zucchini, drained
3 c. unsifted flour
1 tsp. soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. baking powder
2 tsp. vanilla
1 c. chopped nuts
2 1/2 c. peeled and chopped apples
Grease and flour tube pan. Beat eggs, add oil, sugar, zucchini and vanilla. Mix well. Sift together flour, soda, baking powder, salt and spices. Add to creamed mixture. Add apples and nuts. Bake at 350 degrees for 1 hour 15 minutes.
Freezer Apple Pie Filling
6 lbs. apples
2 c. sugar
1/4 c. all purpose flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 tbsp. lemon juice
Wash, peel, core and slice apples. Place apples in soaking solution (1 tablespoons salt, 1 tablespoon vinegar, 2 quarts water to prevent darkening).
Combine sugar, flour, and spices. Rinse and drain apples; stir into sugar mixture. Let stand until juice begins to thicken. Place 2 pints of apple mixture into freezer container. Seal and freeze.
TO BAKE: Place 2 pints pie filling into a 9 inch double crust pastry. Cut vents in top. Bake on baking sheet 40 minutes at 425 degrees

Roasted Pork tenderloin with Apples
Slice the ends off of 3 apples
Cut the apples in half, remove the cores and arrange in a roasting pan
Trim off thin end of 2 pork tenderloin
With butcher’s twine tie the meat to even out the thickness
Sprinkle with salt and pepper.
Brown in a frying pan
Lay the tenderloins over the apples
Roast at 400 degree for ½ hour
Or until apples are tender.
Remove the meat and apples.
Deglaze the pan with brandy and real maple syrup to taste
Reduce the sauce by half
After the meat has rested for 15 minutes slice and serve with the apple halves.

3 1/2 cups apple cider
1/2 cup packed brown sugar, plus 2 tablespoons
1/3 cup honey (preferably 100 percent raw honey from a small producer)
1 teaspoon ground cinnamon
1/8 teaspoon salt
Pinch freshly ground pepper
6 unpeeled Braeburn, Golden Delicious or McIntosh apples, halved and cored with a melon baller
1/2 cup golden raisins or currants
1/2 cup dried apricots, julienned
6 whole cloves
2 or 3 star anise pods
2 to 3 cinnamon sticks, optional
1/4 cup apple brandy
In a medium saucepan, combine the apple cider, brown sugar, honey, cinnamon, salt, and pepper. Bring to a boil, reduce heat, and simmer for about 25 minutes or so, or until mixture is syrupy and reduced to about 2 2/3 cups.
Preheat the oven to 350 degrees F. Put the apples, cut side down, in a 12-inch baking pan. Distribute the raisins, apricots, cloves, star anise, and cinnamon sticks, if using, over the apples. Pour the hot syrup over the apples. Cover the pan with aluminum foil.
Bake 25 to 30 minutes, or until the apples are almost tender when pierced with the tip of a sharp knife. Remove from the oven, turn the apples over, add the brandy. Baste apples with the apple cider and apple brandy many times, allowing the apples to absorb the flavor. Let the pan stand, covered, for 15 minutes. Serve baked apples with the liquid and dried fruits spooned over them in a bowl. Served with whipped heavy cream or ice cream and a sprinkle of powdered sugar

Fried Apples
5-6 tart apples, peeled, cored, and sliced
1 tsp. lemon juice
1/2 cup butter
3/4 cup brown sugar
1/8 tsp. salt
1 tsp. cinnamon
Dash of nutmeg
In a large skillet melt butter. Pour apples evenly over the skilet bottom. Sprinkle with lemon juice then brown sugar and then the salt. Cover and cook over low heat for 10-12 minutes or until apples are tender and juicy. Sprinkle with cinnamon and nutmer.
Serve with pork chops or other meats.
You can add 3 large sliced onions with the apples to the butter in the skillet if you wish too.

Stuffed apples
4 large McIntosh or Empire apples, cored
1 tablespoon lemon juice
3/4 cup brown sugar
1/4 cup instant oatmeal mix or rolled oats
1/4 teaspoon nutmeg, a healthy grating
1 teaspoon ground cinnamon
4 tablespoons butter, cut into pieces
2 ounces, 1/8 cup, golden raisins, chopped
1/4 cup chopped walnuts or walnut pieces or pecans
1 pint Dulce de Leche (caramel) ice cream or caramel swirl ice cream
Whipped cream, in a canister
Preheat oven to 425 degrees F.
Sprinkle cored apples with lemon juice. Mix next 7 ingredients and over-stuff apples. Bake 20 minutes in a small oven safe dish. Transfer apples to small bowls with a spoon and top with ice cream and whipped cream

Almond-Stuffed Baked Apples with Caramel-Apple Sauce:
These stuffed apples come together in minutes and bake while you enjoy dinner. When you caramelize the sugar, don't stir or move the pan until the sugar begins to color. Cook until the mixture becomes a deep amber color. The caramel mixture will splatter when you add the cider; because of this, use a long-handled wooden spoon for stirring.
Filling:
1/2 cup sliced almonds, toasted
1/4 cup sugar
2 teaspoons butter, melted
1/4 teaspoon vanilla extract
1/8 teaspoon salt
Dash of ground nutmeg
1 large egg white
Apples:
4 Braeburn apples, halved
Cooking spray
1 tablespoon sugar
1/4 teaspoon ground cinnamon
Sauce:
1/2 cup sugar
3 tablespoons water
1/2 cup apple cider
1 tablespoon brandy
1 tablespoon Grand Marnier (orange-flavored liqueur)
1 teaspoon butter
Dash of salt
Preheat oven to 350°.
To prepare filling, place almonds in a food processor; process until finely ground. Combine ground almonds, sugar, and next 5 ingredients (through egg white), stirring until well combined.
To prepare apples, core, remove seeds, and carefully scoop out 1 tablespoon from each apple half to form a cup. Cut a thin slice off the rounded side of each apple half to make a flat surface; place apples cup-side up on a jelly-roll pan coated with cooking spray. Combine 1 tablespoon sugar and cinnamon; sprinkle generously over apples. Spoon about 1 tablespoon filling in cup of each apple half. Bake at 350° for 40 minutes or until apples are golden and tender.
To prepare sauce, combine 1/2 cup sugar and 3 tablespoons water in a small saucepan. Cook over medium-high heat (do not stir) until mixture begins to brown; gently tilt pan and swirl to evenly brown mixture. Reduce heat to low; slowly add cider, stirring constantly. Remove from heat; stir in remaining ingredients. Serve over apples.
Yield: 8 servings (serving size: 1 stuffed apple half and 1 1/2 tablespoons sauce)

Apple Fritters
INGREDIENTS:
1 cup Flour
1 teaspoon Salt
1 teaspoon Baking Powder
2 teaspoons Sugar
2 Eggs, beaten
½ cup plus 1 tablespoon Milk
1 teaspoon Oil
1 teaspoon Vanilla
1 teaspoon Cinnamon
4 medium cooking Apples (cored, peeled and sliced)
Oil for frying
Maple Syrup, warm
Confectioner’s Sugar
DIRECTIONS:
1. In a bowl, combine flour, salt, baking powder, cinnamon and sugar.
2. In another bowl, combine eggs, milk, oil and vanilla. Add to dry ingredients and mix well.
3. Dip apples into the batter and fry in hot oil until golden brown.
4. Drain on paper towels.
5. Serve with hot maple syrup or confectioner’s sugar.

4 Apples
8 tablespoons white or brown Sugar
4 teaspoons Butter
½ teaspoon cinnamon
DIRECTIONS:
1. Pre-heat oven to 375 degrees
2. Core apples.
3. Remove a 1 inch strip of skin around the middle of each apple.
4. Place apples upright in a baking dish.
5. Fill center of each apple with 2 tablespoons of sugar, 1 teaspoon butter and 1/8 teaspoon of cinnamon.
5. Put ¼ inch of water in the bottom of baking pan.
6. Bake 30-40 minutes, pierce with fork, if tender they are done.

It's not really a recipe but for a tasty little snack you can take sliced apples and top with smoked Gouda cheese. Place under a broiler for a few minutes (just until cheese melts) Yum Yum.
