I miss the times in my life when holidays were happily celebrated. Everyone that I loved is gone. The one family member remaining(and her family) have excluded me. Therefore, I usually fix something up nice for myself. Sometimes a friend will invite me to their home for a holiday...even when I can not go, the gesture touches my heart deeper than you know.
Now that I am finally back in the work force, I hope to working on as many holidays as possible. Since I work in a hosp., this is likely going to happen...I couldn't be happier about it.
Okay...my special meal,when I return from the hosp. Monday night(Yay! I do get to work that afternoon,early evening.)
Mmmmm....anything will do. I'm pretty easy to please.

My husband and I plan on barbequeing ribs and pork shoulder or butt... Need to go shopping still. We'll probably have corn on the cob, or corn bread... I might make a pie or something sweet. I like beans... I'll probably get a big can of baked beans and doctor that up.
Some years we make big batches of homemade chili...
When I was young my family used to grill up hot dogs and hamburgers... My Mom would buy and apple pie from Marie Calendar's... keeping it simple is nice too.

I just bought a family pack of ribeye steaks, white corn (gonna roast these on the grill with veggies) gonna get some crab claws on saturday, a big Ceasar salad and homemade cheesecake!

I guess it isn't special, but I am cooking this weekend, which I don't normally do. I'm making spagetti with meat sauce, garlic bread, and a pecan pie.

Just the regular fare, I plan to grill:
shirmp
vegetables
chicken
sausage
Add a bowl of artichoke/mushroom soup with a glass of wine and presto. One fine meal.

Homemade Pizza...
It's my son's favorite dish and he'll be coming home this weekend after finishing his first week in college.
It's my favorite dish also... any excuse for pizza... :)
