Anyone got a good recipe for cooking Chilean Sea Bass? I've used a miso marinade before but am looking to try something new...

CHILI-BROWN SUGAR CHILEAN SEA BASS

-1 large fresh Chilean Sea Bass filet, filet into 1/4 for 4, or 4 small fresh Chilean Sea Bass filets
-2 Tbs. sweet cream unsalted butter
-1 large spoonful brown sugar
-1 Tbs. Hot Chili Powder, or use 2 small Habenero chilis, chopped
-1 1/2 tsp. White Truffle oil (can be substituted for olive or grapeseed oil)

Mix Chili Powder or Habanero chilis and brown sugar together in small bowl. Rub into Sea Bass filets. Over medium to medium high heat, melt together oil and butter. Once heated, add fish. Cook skin up until sauce carmelizes on top of fish. Flip skin-down for another 5-10 minutes. Total prep and cook time: 20 minutes. If you choose to bake, broil or grill this recipe, rub the fish as directed and marinate with oil and melted butter 30-40 minutes.


Cumin Crusted Chilean Sea Bass

1 tablespoon cumin seeds
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
4 (6 ounce) chilean sea bass fillets (about 1" thick)
1 teaspoon olive oil
1/2 teaspoon butter
2 tablespoons chopped fresh parsley
4 lemon wedges

Preheat oven to 375 degrees F.
In a dry large skillet over medium heat, toast the cumin seeds for 2 minutes or until they just begin to smoke.
Grind together the cumin, salt, and pepper in a mortar and pestle or other grinding tool (I use an electric coffee grinder) until finely ground.
Rub the cumin mixture on both sides of the sea bass fillets.
Heat the oil and butter together in an oven-safe pan/skillet over medium-high heat, then add the fish and brown each side of the fillets for 2 minutes.
Transfer pan to the oven (you can wrap the handle of the pan with foil, if necessary), and bake for 4 to 5 minutes or until the fillets flake easily when tested with a fork.
Garnish with chopped parsley and lemon wedges and serve.

Have you tried beer battered Sea Bass? Beat the bass with a can of beer......and then just drink the beer.
