_Tuna - cut in perfect small dice
_Sambal Olek - Spicy Chile Sauce - find in oriental market
_Rice Wine Vinegar
_Double Black Soy Sauce - Oriental Market
_Sesame Oil - just a few drops to coat fish, very powerful taste
so add a little at a time until you get a good taste.
_Scallions, sliced thinly on a bias - 45 degree angle
_Red Bell Pepper - remove ribs and membrane, cut in small dice
_Salt - Preferably Kosher
In bowl combine RIce Wine Vinegar, Soy Sauce, Sambal Olek, and a touch of Sesame Oil, pinch of Salt (you are basically making a dressing for the tuna)
Approximate ratios - Adjust to taste
_1 part Vinegar
_1 part Soy Sauce
_1/4 Part Sambal
_1/8 Part Oil
Just before serving in a separate mixing bowl add
_Tuna
_Scallions
_Red Bell Peppers
_Enough Dressing to Coat Mix
Taste and adjust Seasonings to Taste
Serve on top of Nori Crackers or Cups with a Premium Chilled Sake and You're Golden

1/2 hot house cucumber
to taste, salt and freshly ground black pepper
10 ounces very fresh tuna fillet
1-2 lemons, juiced
1-2 teaspoons wasabi paste
1 tablespoon rice vinegar
2 tablespoons extra virgin olive oil
1 tablespoon fresh chives, chopped
1 tablespoon fresh parsley, or mitsuba, chopped

Preparation Instructions
Peel alternate strips of the cucumber, cut it in half lengthwise, and remove the seeds. Slice very thinly and spread in a colander. Sprinkle the layers of cucumber with salt and let drain for 1 hour.
Remove the skin from the tuna and dice the flesh with a very sharp knife. Put the flesh into a bowl. Combine the lemon juice and wasabi with a little salt and pour over the fish. Lift the fish with your fingers to mix it well with the dressing. Cover, refrigerate, and let marinate for 1 hour.
Rinse the cucumber and dry on a cloth. Make a vinaigrette with the vinegar, olive oil, and pepper, and stir in the cucumber and chives. Spoon a flattish circle of cucumber onto a serving plate. Drain the tuna and mound it on top. Garnish with the mitsuba or parsley.

Tuna Tartare
1 egg yolk
2 tablespoons Dijon mustard
2 tablespoons olive oil
1 small onion (minced)
2 tablespoons dill (minced)
3 tablespoons lemon juice
1/2 teaspoon A-1 Steak Sauce
1/4 teaspoon salt
1/4 teaspoon fresh cracked pepper
1 lb fresh sushi grade tuna (julienned)
thin slices black bread
thin slices plum tomatoes
dill sprigs
Whisk to gether the yolk, dijon and oil until well blended.
Add the onion, dill, lemon juice, A1, salt and pepper. Mix well.
Fold in tuna to coat.
Cover. Chill 1 hour.
Mound on a platter, surround with rest.
