Tho' I think the ideas suggested were good, you need to be careful in mentioning a gift. Some may have not been able to afford a gift but did get you a card to wish you the best.
You might want to be truthful. Say something like you are happy that they chose to celebrate this wonderous day with you. But in all the excitement somehow all the money cards, gift cards & well wishing cards were put together (after they were opened by you) & you are unaware of what card goes with what gift. That you are sorry & would love to properly thank them Some will take the time to let you know, others will not. But you will have acknowledged them & your faux pas. You may have to write a second thank you.

Try thank you for the gift, and if you are not sure if they gave you a real gift or money, or just a card, then follow it with the card is nice. It's a little late now, if this is a mis-hap from a shower, but you might discuss this with your Maid of Honor. She cant fix it now, dont expect her to try, but she might be asked to perform the task again, and needs to know. Otherwise, try to think of a moment you saw them at the wedding. Express your gratitude for coming. Fill the card with other things, thank them for coming, helping, always being there. Then you do not look like you didnt thank them for the gift you simply thanked them for everything

First of all, this was a huge mistake on your part. It is very rude of any bride to "forget" to write down the gifts. You must have treated it like a big Christmas morning and all of a sudden you were 5 yrs. old again - all you cared about was opening presents. Wow. Very inconsiderate and grossly immature.
I mean, for our wedding, the very next day both our immediate families got together and as we opened gifts, someone would write on the back of their card what was received. It's not a difficult thing to do.
You can write and say, "Thank you both so much for being there to share in our special day. Thank you greatly for your very generous gift. We hope you enjoyed yourselves and we appreciate you being there to celebrate with us."
Shame on you.

If you know they gave you money (this is what we did) instead of writing the amount we just wrote.
Dear so and so,
Thank you so much for the money. It will really help us get started on finishing up on the last details of the house. The wedding was really special and we are so glad that you were able to spend that special day with us. Hope to see you soon.
With love,
so and so.
You might also want to include (if true) that our new address is:
Hope this gets you started.

Say, "Thank you for the gift" or something of that nature. Then if they gave you a gift or money you are covered.

You deposited the checks and money *before* sending the thank you card? Wow, rude!
You don't say "thank you for the money" anyhow. You say "thank you for the generous gift".
