You should just be friends with her. I think she'd rather have a good friend than another suitor. When she breaks up with her boyfriend, then you can swoop in, be her shoulder to cry on (maybe not literally, but close enough), and let her see what a great guy you are.

I would just be her friend, I mean she said that she has a boyfriend. Usually girls wont mention their Boyfriend if they are trying to meet a new guy, in a relationship way.
If it's meant to be, your friendship will grow into more, and will be there later if she becomes single again.
