Cous-cous with basil and pinenuts
1/4 cup fine chopped onion
1/4 cup fine chopped red pepper
1 tbs chopped fresh basil or 1 tsp dried
2 tbs pinenuts
1 tbs dried raspberries Optional
1 cup cous-cous
1 cup water or weak chicken broth
Sauté veggies until soft
Toss in a bowl with basil, cous-cous, pinenuts and raspberries if desired. Add boiling water or broth. Cover with tight lid and set aside for 5 minutes. Fluff with a fork and serve
Except for sautéing the vegs., and boiling the water there is no cooking required. The cous-cous can rest while you fix the table and plate the rest of dinner

A DIFFERENT PASTA DISH
Received from Chef Leo, Prince Macaroni Resturant
1 box pasta "shells" cooked
2 cans minced clams
Lots of smashed garlic
1 stick butter or like butter
Salt, pepper, parsley (fresh chopped is best)
1 bottle clam juice.
Saute all of the above ingredients till almost boiling. Pour over pasta shells. Pour into a bowl and eat with a spoon. YUM

Maybe a pasta salad would go great. I make one using pasta, cucumbers and tomatoes (both chunked), some feta cheese and Kraft Signature Greek dressing with feta and oregano. It's simple and it's sooooo good. Or you can do a mock mashed potatoe and use cauliflower instread. You boil it till it's sound and mash it up like regular potatoes. Add chicken broth and butter and a little cream and it's done. It looks like potatoes but it's not. It's really good too.

serve it with rice pilaf and Fresh(or frozen) carrots blanched and tossed with melted butter,honey and a pinch of dill.If your rasberry chicken is served with a pan gravy garnish with a slice of kiwi fruit.
Make a boxed version of rice pilaf found in any supermarket.Near East brand is my favorite.
Buy enough fresh carrots for the two of you.peel and cut them into slices and blanch in salted water until just tender.In the meantime,melt some butter.OH BUY THE WAY,if fresh veggies aren't you thing at cooking,Don't worry about it!.Pick up a bag of frozen carrots and prepare the amount needed according to the package or your experience.
When the carrots are cooked mix with melted butter,honey,and a pinch a dill weed(found in the spice section of market).

Cheesy Broccoli Casserole
Serves 8
1-6 oz. package Stove Top Stuffing Mix for Chicken
2-10oz. packages frozen broccoli florets; thawed, drained
1-10 3/4 oz. can condensed cream of mushroom soup
1 c Cheez Whiz cheese dip
Preheat the oven to 350ºF
Prepare stuffing mix as directed, but using only 3 T margarine. Set aside. Mix broccoli florets, cream of mushroom soup and Cheese Whiz cheese dip in 2-quart casserole. Top with stuffing. Bake for 30 minutes.
Make-ahead time-saver:
Assemble recipe as directed, and refrigerate several hours or overnight. Bake uncovered for 45-50 minutes or until hot.

1 can whole corn, drained
1 can creamed corn
1 box Jiffy corn muffin mix

Mix all ingredients together and put in 2 quart baking dish.
Bake for one hour.

Try veggies....you can get those vegetables now in the plastic where you just pop them in the microwave for a few minutes. Put them in a bowl and they're done....pretty good too! Also you could do a salad with your own homemade dressing. Go to http://www.rachaelraymag.com she has a lot of different salad dressing recipes there. Good luck and enjoy!

Tonight, I will be making a Mushroom risotto with some grilled herb chicken... Delicious :) If you haven;t tried risotto, I would recommend giving it a try. There are so many flavour options... I also really like a spicy risotto or a sweet pea risotto;.... Google risotto recipes - the possibilities are endless!

1/2 cup cornmeal
1/4 cup all-purpose flour
1 teaspoon dried basil
1 teaspoon kosher salt, plus for seasoning
1/4 teaspoon cayenne
Freshly ground black pepper
2 large eggs, slightly beaten
Vegetable oil, for shallow frying
2 small zucchini, sliced into 1/8 to 1/4-inch thick coins
Drain large zucchini of its water before proceeding with recipe,. To drain, cut into slices and arrange them in layers in a collinder ; sprinkle each layer uniformly with coarse salt and let drain for 20 to 30 minutes in sink. Strain under cold water, pat dry and proceed with recipe.
Line a dish with paper towels and set aside.
Whisk the cornmeal, flour, basil, salt, cayenne, and pepper in a bowl.
Beat the eggs in another bowl.
Heat 1/4-inch vegetable oil in a skillet over medium heat until hot but not smoking.
Working in small batches, toss the zucchini coins in the eggs, then coat in the cornmeal mixture to cover completely.
Carefully drop the zucchini into the oil, and fry until golden brown, about 2 minutes on each side or until crisp.
Remove from the oil with a slotted spoon and place on the prepared plate.
Season with salt, cool slightly and serve.

How about a salad made up of baby spring salad, mandarin orange slices, raisins and sliced strawberries tossed with light done right raspbetty vinaigerette dressing and some sliced french bread or garlic bread?
