If it is a modern projector (less than 2 or 3 years old) then turn it off immediately via the remote control or the push-button switch on the unit. The projector is smart; it will turn off the bulb, but continue running the fan until the system has cooled down. Eventually, the whole unit will power down.
Do NOT unplug it or switch it off on a power strip immediately after use; it is still too hot.

You can turn off an LCD projector completely as soon as you have turned off the lamp but it poses a serious risk to the lifetime of the lamp. The reason for the two step process (turn off lamp, turn off device) is so that the device can continue to operate the cooling fan after then lamp has been turned off. This prevents the lamp from deteriorating or fracturing. Your best route is to wait until the projector indicates that it is safe to turn off the device.

No you can't. Since it gets hot, you need to keep it plugged to the electricity so that the fans will keep working and cooling it. 15 minutes or so is enough.
