Nachos

Stuffed Baked Potatos (bake the potato, put out a variety of toppings, each person tops their own)

Build a pizza - using English Muffins as the crust, have each person put their own sauce on, their own cheese, and then their own toppings - bake.

Try this website:
allrecipes.com

Also, try this recipe. Sounds odd but tastes awesome!

"Not Your Mom's" Tater Tot Casserole

1 lb. lean ground beef
garlic salt
1 can cream of chicken soup
1 can cream of celery soup
1/2 to 1 cup milk
1 package tater tots
8 oz. shredded cheddar cheese

Brown the ground beef, then sprinkle with garlic salt.

In a bowl, combine the soups and the milk. Stir in most of the cheese, reserving a little to sprinkle on top of the casserole. Stir in the tater tots. Finally, stir in the ground beef.

Pour this mixture into a lightly greased 13x9 pan. Sprinkle with remaining cheese.

Bake in a 350 oven for 30 minutes, or until the tater tots are cooked through and the edges of the casserole are bubbly. (May take up to 45 minutes).

You can cut down on the fat by using low fat soups and cheese, and choosing the leanest ground beef you can find.

www.kraft.com or the Betty Crocker site both have great easy reciepes. Kraft even has a thing where you put in the kind of food you have (ex. chicken, cheese, rice) and it will give you a reciepe using that stuff.

I read your question and I would like to offer you a tip.

When you cook a meal, if you can, make two if it's a one dish meal and freeze one. That way when you are in a hurry all it requires is a warm up.
