Raisin Spice Drop Cookies Preparation
Spread butter on microwave dish. At Medium HI, cook until melted for 45 seconds. Then add coffee, sugar and egg and mix well with butter in the microwave dish. When stirred to perfection, add the other ingredients and whisk until smooth. Prepare an 11 x 14 inch of cardboard covered with wax paper. Pour 16 teaspoon drops of butter. Then place on heat at HI for 2 1/2 to 3 minutes. Remember to move the cardboard around in half while cooking. When cookies are baked and done, remove it from the dish to cool. Repeat the procedure with other mixture. With this microwave recipe, you can yield 4-5 dozens of Raisin Spice Drop Cookies.

BAKING POWDER BISCUITS

1/3 c. shortening
1 3/4 c. all purpose flour
2 1/2 tsp. baking powder
3/4 tsp. salt
About 3/4 c. milk
Cut shortening into flour, baking powder and salt with pastry blender (a fork or mixing spatula works just fine) until mixture resembles fine crumbs. Stir in just enough milk so dough leaves side of bowl and rounds up into a ball. Too much milk makes dough sticky, not enough makes biscuits dry.

Turn dough onto lightly floured surface. Knead lightly 10 times. Roll 1/2 inch thick. Cut with floured 2 inch biscuit cutter. Arrange 6 biscuits with sides almost touching in circle on 10 inch microwavable plate. Microwave uncovered on high (100%) 1 minute; rotate plate 1/2 turn. Microwave until no longer doughy, 1 to 2 minutes. Let stand 1 minute; remove to rack. Repeat with remaining biscuits. 1 dozen biscuits.

As always, using cake flour instead of AP flour will make your biscuits rise better. Using cold liquids and frozen mixing bowls an utensils will help, too. Try not to use your hands too much when kneading. The heat from your hands will toughen the dough.

I can't vouch for how these biscuits taste. Really, if you have access to a regular oven, they should cook in around twenty minutes. If you only have a microwave, good luck.

I don't know of one you can do in the microwave.......they won't come out right and there is the possibility of exploding and making a really big mess to clean up. I can give you a recipe for the reguler oven if you want it.
