Uses of MSG
. It enhances the natural flavors of meats, poultry, seafood, and many vegetables. It can be found in most soups, stews, meat-based sauces, salad dressings, processed meats, frozen entrees, ice cream, frozen yogurt, and snack foods.It is also used in low fat foods to make up for flavor lost when fat is reduced or eliminated.

How Is MSG Made?
MSG was first extracted from seaweed and other plant sources but is now made from starch, corn sugar, or molasses from sugar cane or sugar beets.

MSG is the sodium salt of glutamate and is simply glutamate, water, and sodium. A process of protein hydrolysisis is used to produce MSG. In this process, glutamic acid is freed from protein through fermentation or use of chemicals or enzymes.

AJINOMOTO
Ajinomoto is a Japanese brand name for MSG, monosodium glutamate, a flavor enhancer. Ac'cent is the primary U.S. brand name, and the Chinese version is called ve-tsin.

MSG has very little flavor of its own, but it 'improves' or enhances the flavor of other foods it is used with.

Some individuals seem to be sensitive to MSG, and exhibit what is known as 'Chinese Restaurant Syndrome' (because of its use in Asian cooking). The symptoms include headaches, chest pains, facial pressure, burning sensations, and sweating. The FDA continues to list it as GRAS (Generally Recognized As Safe), but all foods containing MSG must state so on the label.
