keep them in the fridge but take them out and store until they reach room temperature before cooking. To check if they are fresh you need to put the egg in a glass of water, if the egg stays horizontally it is very fresh if it lies semi horizontally (diagonally) it can be up to a week old and if it floats in a vertical position it is stale.

Raw eggs in shell 3 to 5 weeks

Why Should Eggs Be Refrigerated?
Temperature fluctuation is critical to safety. With the concern about Salmonella, eggs gathered from laying hens should be refrigerated as soon as possible. After eggs are refrigerated, they need to stay that way. A cold egg left out at room temperature can sweat, facilitating the growth of bacteria. Refrigerated eggs should not be left out more than 2 hours.

Apparently eggs should be kept at room temperature, but I always keep mine in the fridge.

I know a few people that assure me that eggs last for ages and to ignore the use by date on the pack, but I'm a bit dubious to be honest. Things can go very wrong if you have an off egg!

7days in the refrigerator to be "fresh". You can still eat them for up to 30 days. Older eggs are good for making egg salad and deviled eggs. Fresh eggs are harder to "peel" after you boil them. My grandmother use to keep eggs in a wire basket. She said that was the best way to store them. Do not leave eggs out of the "frig" as bacteria will form very fast.

The first thing you buy the eggs, put them the other way round in the fridge. The sharper one facing down. This will keep the egg fresher.
