Sell by date is the latest date a retailer can sell the item to the public unless making them aware it has past.
Use by date is last date the product should be eaten if kept in its original environment (changes if frozen)
Best before date is the date it is recommended to eat the product by before the taste or flavour of the product may be impared.

Yes. On highly perishable products the sell by date has to allow for enough time for consumption if the product has been purchased on that day. The product will usually at least a week or more. On the other hand, the "use by" date is a guide for products that have a long shelf life in order to guarantee freshness through that day. If you choose to use that product after that date it might be OK and you might be fine but the manufacturer cannot make any promises or guarantees.

Both different the sell by date is when the retailer must sell the product by, and the use by date is the latest date the product should be consumed by.

Sell by date is the date that the shop must sell the item by, it is illegal to sell anything past it's sell by date (at least, it's illegal in the UK)
Use by date is the recommended date the item should be consumed by - but chilling, freezing, etc can extend this date. Use by is a guidline only, not a legal requirement.

sell by is recommended sell date but usually a day or two over is still good. Same with use by date.

Yes slight, sell by means the shop can't leave it on the shelf beyond this date, but the product may still be good for a few more days, use by date means you must use the product by this date.

You pretty much said it yourself, Use by is the date it should be used by and sell by is the date the shop must have it off the shelf, pretty straight forward when you think about it
