for peeing, if you're on a race and can't hold it anymore; you just go on your shorts and rinse it with your bottled water. for number two.. you just have to decide on holding it or quiting the race..
if you are training, you can just stop and go around a bush or something. you can wipe with your undershirt or your socks..

During shorter rides, they can hold it for the 4-5 hours it takes to race. During Grand Tours, they probably don't go much.
You have to poo when you eat more than you can use, or you eat things that you can't metabolize. During rides like the Tour de France, it's all the riders can do to eat 9,000 calories per day, and they STILL lose weight! Their diets are very strict and specific to their digestive needs, and they use every gram of food they ingest.
One of the major reasons that racers drop out of Grand Tours is stomach problems. The human body can only process so much food, and with the extreme daily stress added to it, it's no wonder they sometimes feel like crap!

Bikernoj answered correctly, but I thought I'd share a fun story I read from former road pro Bob Roll...during one of his Tour wins, Greg Lemond had a little digestive problem that resulted in some explosive diarrhea. While still riding, he totally lost it and filled his shorts up to the point that diarrhea was flowing out of his short over the wasitband and falling onto the rear tire, which flung it all over the riders behind him.
Ugh!

When doing any physical activity as strenuous as racing, certain body functions tend to slow down to direct energy where you are applying it... you just wouldn't have to go during a race... but if you for some reason really HAD to.. I suppose you would go into the bushes.

There's the famous story of a rider in the TDF suffering from the runs and he pulls off the course and goes behind a bush. He gets all tangled in his clothes as his number was pinned onto his bib as well as his jersey. When he finally gets stripped down and lets loose he turns around and sees a family having a picnic and a inside look of the TDF. True story!

One of two things happen - 1. they literally pee while riding (assuming they are Male). 2. There is an agreement among the group/peloton as a whole to stop at a spot to deal with the issue.
