In every sacnner, you find in-build or pre-build software comes for easiness to use.
But the following work with the major,
"After scanning it ask to save the file, that time change your extension in your extension seleciton box, very below to file name"
Or you can even open that image using any photo editor and now choose file >> Save As > in name box type as show in example
"type_name_with_this_quote.jpg"
now click on save, and see it work for you, or If you have "Irfanview", very easy just open the image, click on save as and select jpg in the save as format.

Or, after the scan is complete and it has become a file, go to
the menu where it says File and click on Save or Save As, then save it as a .jpeg or .jpg file extension.

In the software that is used for scanner, there is the option to choose the default format for saving. Usually it defaults to TIFF which is used for pbulications. You can open the software window and look for settings options, and change it from TIFF to jpeg.
