Sprouting potatoes can form a toxin called solanin and can make you sick. Some recommend discarding such potatoes and I would agree if they are heavily sprouted. Plant them and eat the new potatoes next year instead.

If you insist on eating sprouted ones,. carefully trim the sprout and a cone of potato flesh under it, cutting out anything discolored. These potatoes should be peeled before using as well and you want to discard any greenish part.

I grew up relatively poor and we ate them sprouts or not and no one died, by Mom always carefully trimmed them.

Potatoes belong to the same family as Deadly Nightshade, and no leaves or sprouts should ever be eaten.

I personally prefer not to eat them if they have shoots on them. I guess you can if you must though. I would just cut the peeling off before cooking them.

sure, you just break off the "eyes" (thats what they are called) and cook em like you normally would, its just the potato trying to grow,if you put it in the ground you would grow more taters
