Stuffed Jalapeno Peppers with Crabmeat
INGREDIENTS:
* 1 large can whole jalapeno peppers (approx. 28 ounces)

* Filling:
* 1 pound flaked crabmeat
* 2 tablespoons finely chopped green bell pepper
* 2 tablespoons finely chopped onion
* 1/4 cup cracker meal
* 1 egg, beaten
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 1/8 teaspoon cayenne pepper
* 1 garlic clove, minced
* 1/4 cup milk
* .
* Breading:
* 2 cups cracker meal
* 1 cup milk
* 2 eggs
* 1/4 teaspoon salt
* 1/4 teaspoon pepper
PREPARATION:
Cut peppers in half lengthwise. Discard pulp and seeds and rinse carefully.
In a large mixing bowl, combine remaining filling ingredients. Stuff pepper halves with crab mixture and press stuffing around the pepper.
Set peppers aside.
Prepare breading mixture. Place 2 cups cracker meal in a flat pan, like a pie plate; in another bowl mix together milk, eggs and salt and pepper. Dip peppers in egg mixture, then roll in cracker meal to coat thoroughly. Repeat procedure with all peppers. Deep fry at 365° until golden brown. Drain on paper towels or brown paper.
Jalapeno Pie
INGREDIENTS:
* 1 can chopped mild green chilies, 4 ounces
* 3 to 5 jalapeno peppers, seeds removed, chopped
* 8 ounces Monterey Jack cheese, grated
* 8 ounces cheddar cheese, grated
* 6 eggs, beaten
PREPARATION:
Butter a 9-inch baking pan. Spread chilies and peppers in bottom of dish. Spread cheeses over pepper. Add dash of garlic powder to beaten eggs and pour over cheeses. Bake at 350 degrees for 30 minutes.Cut into small squares.

Stuffed Jalapeños= Chiles Jalapeños rellenos
1) you mix tunafish+ cream (thick/heavy one) + little bit of mayonaise + chopped almonds, then u stuff the chiles and refrigerate about an hour before serving,
2) Mix chopped cooked chicken breast + chopped onion, tomato, capers and/or green olives + raisins + pepper+salt + a laurel leaf and cook all these in a pan with some oil.
Stir egg whites till they get "foamy" ( i hope u know what i mean) then add the yolks.
Put some flour on a dish and cover the chile with it ( not too much) then pass the chile through the eggs and fry it in oil.
Note before stuffing the chiles of the 2 recipes above : wash them, then cut them on one side (not in half just leave it open as a little bag, take the seeds out and put them to cook in salty water on the stove.
3) stuffed uncooked chiles in the same way with emmental/gouda cheese and then pass them trough a mix of eggs, some yeast, salt and some flour. Then fry

Pico de Gallo
5 jalapeno peppers, chopped
1 cup fresh cilantro, chopped
2 large tomatoes, chopped
1 small onion, chopped
salt to taste
Mix all ingredients. Serve with tortilla chips. Recipe can be doubled.

Grilled Bacon Jalapeno Wraps
INGREDIENTS:
6 fresh jalapeno peppers, halved lengthwise and seeded
1 (8 ounce) package cream cheese
12 slices bacon
--------------------------------------------------------------------------------
DIRECTIONS:
Preheat an outdoor grill for high heat.
Spread cream cheese to fill jalapeno halves. Wrap with bacon. Secure with a toothpick.
Place on the grill, and cook until bacon is crispy.

I have so many it would take me forever here.
I especially like to replace the jalapenos with serranos or habaneros.
Roast them, boil them, freeze them, chop them up and put them in everything. Email me and I will give you recipes for salsas, pico de gallo, green sauce and whatever else your heart desires. I just need a little while to get my recipes together.

jalapeno poppers :) they are stuffed with cheese, battered and deep fried.
