you can make Tiramisu with it...
This is how I make it:

I take 2 packages of cream cheese and soem cool whip
whip them together, but not too much. You want it to still be somewhat still. Add a little vanilla extract, some sugar and some alcohol. I like putting some rum in (or Kaluha). Not too much, but enough to taste it a bit.
Then you take some espresso, put it in a bowl. You'll want to make quite a bit because you need to dip some cookies in it. Add some sugar, a little cocoa powder, and some more of the alcohol. It should taste like strong coffee with a hint of rum (or Kaluha).
Take some Ladies Fingers (they're cookies) and one at a time dip it in the coffe mixture. You don't want them too soggy. Cover the bottom of a cake pan or whatever with the cookies. Spread a layer of the cream cheese mixture. Repeat the process of the cookies and layer more cream cheese on top. Depending on how deep your dish is, keep going. Your last layer will be the cream cheese mixture. Sprinkle with a bit of cocoa powder on top, and chill it for an hour or two. I make this all the time and it's a big hit.

Use apricots, almonds and honey. Blend the ingredients in a Cuisinart or blender with the cream cheese and enough milk to thin the mixture to a thick spread consistency. The proportions are according to taste. It is delicious as a topping on short bread cookies. You can use skim milk if you want it is just for consistency.Hope you enjoy!!
