To me dark brown sugar is too strong. It tastes brunt. I use the light in all recipes even if it calls for the dark. It all depends on your taste.

Darker has a stronger molasses taste. At least it is suppose to, you can't tell in cheap sugar. Things like meats you would want to use dark since you will want a stronger taste. Baking usually light. It really doesn't change most recipes, it is just preference of the consumer.

I think it does. That's why certain recipes specify light or dark.
Try tasting each and you will know the difference.
