MEXICAN STUFFED MUSHROOMS
Ingredients:
1 pound hot sausage
1/3 cup soy sauce
1 clove garlic
2 pounds large mushrooms
Directions:
Mix together the first 3 ingredients. Stuff mushrooms. Bake at 350 degrees for 20 minutes or until sausage is done.
BAKED DEVILED STUFFED MUSHROOMS
Ingredients:
1 pound medium-sized fresh mushrooms
3 ounces cream cheese, softened
1 cup deviled ham
1 1/4 cup soft bread crumbs, divided
1 teaspoon onion powder
1/4 teaspoon black pepper
3 tablespoons butter, divided
Directions:
Rinse, pat dry and remove stems from mushrooms and set aside. Chop enough stems to make 1/2 cup; reserve for later use. In medium bowl, combine cream cheese, deviled ham, 1/2 cup bread crumbs, reserved chopped stems, onion powder and black pepper.
In a saucepan, melt 2 tablespoons butter. Lay out all mushroom caps on paper towel, tops up. Brush with melted butter. Mound stuffing into each cap. Place in shallow glass baking dish and flatten stuffing mound slightly with spoon. (This will keep bread crumbs from falling off.) Melt remaining butter and stir in remaining bread crumbs. Sprinkle over stuffed mushrooms. Bake in preheated 350 degrees oven about 15 minutes
CHEESE STUFFED MUSHROOMS
Ingredients:
8 large fresh mushrooms
1 tablespoon olive oil
2 cups ricotta cheese
3/4 cup grated Parmesan cheese
3/4 cup shredded mozzarella cheese
1/4 cup pesto
Directions:
Preheat oven to 375 degrees. Wash mushrooms, remove stems, hollow out and brush inside and out with olive oil. In a medium-size mixing bowl, combine cheese and pesto, reserving 1/4 cup Parmesan cheese for later. Stuff the cheese-pesto mixture into the mushroom caps. Arrange the caps on a cookie sheet. Sprinkle the mushrooms with the reserved Parmesan cheese. Bake for 25 to 30 minutes, or until the cheese is bubbling and brownish.
TATER-STUFFED MUSHROOMS
Ingredients:
30 large mushrooms
1/4 cup Low-fat cottage cheese
3/4 cup Mashed potatoes, made with
2 tablespoons Dehydrated onion soup mix AND skim milk
1/2 tablespoon Diet margarine
Directions:
Oven 375F
1. Wash mushrooms, carefully removing stems. Set aside tops. Chop stems.
2. Combine chopped stems with remaining ingredients, except margarine. Spoon onto mushroom tops.
3. With margarine, grease bottom of jelly roll pan. Arrange mushrooms on pan.
4. Bake at 375 F for 10 to 15 minutes or until hot and bubbly. Serve immediately.
ZUCCHINI AND CHEESE MUSHROOMS
Ingredients:
12 fresh mushrooms -- (2-inch size)
3 cups coarsely shredded zucchini
1/4 cup lowfat Parmesan cheese
1 tablespoon fat-free mayonnaise
1/8 teaspoon salt
1/8 teaspoon ground red pepper
1 dash black pepper
1/4 teaspoon Worcestershire sauce
2 teaspoons fat-free Parmesan cheese
Directions:
Remove stems from mushrooms and discard; set caps aside. Arrange zucchini in a vegetable steamer over boiling water in a Dutch oven. Cover and steam 5 minutes.
Place zucchini on several layers of paper towels; cover with additional paper towels. Let stand 15 minutes, pressing down occasionally to remove moisture.
Combine zucchini and next 6 ingredients; stir well. Spoon mixture evenly into mushroom caps. Carefully arrange mushrooms in a single layer in steamer over boiling water in pan. Cover and steam 6 minutes or until mushrooms are barely tender. Arrange mushrooms on a serving platter; sprinkle with Parmesan cheese.
Serve immediately.

Pull off the stems and chop them up fine. Finley chop some onion and garlic. Sautee in butter the stems, onion and garlic with soft bread crumbs. Add salt and pepper, maybe a little italian seasoning. Stuff the mushroom caps with this mixture and bake, 350 degrees for about 15 or 20 minutes. If you dont want vegetarian, add some sausage to the stuffing and bake until sausage is done, about 30 minutes. Yummy!

Clean mushroom caps, put in a mix of stove top stuffing, apples, raisins and Chihuaua cheese. Bake at 350 for 20 minutes.
Another good filling is italian sausage (raw) with a little italian seasoned breadcrumbs and cayenne pepper and an egg. Mix together like meat loaf and bake at 350 for 45 minutes. Make sure the meat is cooked all the way.

Stuffed Mushrooms
INGREDIENTS:
12 fresh mushrooms
1/2 pound ground beef
1 tablespoon minced onion
1 clove garlic, minced
1 tablespoon butter
1/4 cup bread crumbs
salt and pepper to taste
1/4 cup heavy cream
1/4 cup butter, melted
1 teaspoon chili powder

DIRECTIONS:
Preheat oven to 425 degrees F (220 degrees C). Remove and chop mushroom stems.
In a saucepan over medium heat, combine ground beef, onion, and garlic. Cook until beef is no longer pink; drain. Mix in chopped mushroom stems, 1 tablespoon butter, bread crumbs, salt, and pepper. Cook, stirring frequently, for 5 minutes. Remove from heat, and stir in cream.
Dip mushroom caps in 1/4 cup melted butter, and stuff generously with meat mixture. Arrange stuffed mushrooms in a baking dish. Sprinkle with chili powder.
Bake for 20 to 25 minutes in the preheated oven.

Bacon-Wrapped Mushrooms With Honey-Barbecue Sauce:
Prep: 15 min., Cook: 4 min., Grill: 10 min.
24 small fresh mushrooms
12 bacon slices
1 cup Honey-Barbecue Sauce
Wash mushrooms thoroughly. Cut bacon slices in half crosswise, and microwave, in 2 batches, at HIGH 1 1/2 to 2 minutes or until bacon is partially cooked. Pat dry with paper towels. Wrap each mushroom with a bacon slice, and secure with wooden picks. Dip wrapped mushrooms in Honey-Barbecue Sauce.
Grill mushrooms (using a grill basket, if necessary), covered with grill lid, over medium-high heat (350° to 400°) 4 to 5 minutes on each side or until bacon is crisp and thoroughly cooked.
Yield: Makes 8 appetizer servings

I take off the stems and cut them up fine mix them with bread crumbs ,garlic, salt and peeper and some Italian seasoning. i use these to my taste so you can put as much or little as you like. I add a little oil, water and mix it together till it's moist then stuff the caps put in baking pan add a little water to the bottom cover with foil and cook at 350 degrees for about 13 minutes.
