If you're using a carafe-style coffee maker (which pretty much everyone does) use COLD water to make the coffee. Hot water is a better solvent than cold water, which means that it absorbs more of the acids in the coffee and makes it taste sharper and more burnt. Thus, cold water makes cold coffee, and the hotplate on the coffee maker heats it up. Trust me, it tastes better that way.

Also, don't use cheap filters, or bleached filters. Both will make your coffee taste worse. If you use paper filters, use unbleached ones.

Never let coffee stand in the carafe for more than half an hour - the heat from the hotplate will cause the water to evaporate, making the coffee stronger and more bitter.
