I owned my own bakery and also cater for a living, and I swear by granny smith, they are the best baking apple I have ever used, and I tried many...lol
They are not to juicy, so i never have to add flour or cornstarch, so it's all natural flavor, and my family definitely loves the pies and so do my customers.

Why M&M's? That stands for Mutsu and Melrose, two excellent varieties of apple that give delightful results. They keep well, taste well in baking, have good appearance after baking, and have a great many other factors that make them, by far, the very best baking apples you could ever find.

I would also suggest the Red Rome Beauty variety, or for a classic twist, the common Granny Smith apple is a mouth watering choice as well. Green Grannies retain shape and they're perfectly tart and crunchy.

i usually use a 50-50 mixture of Golden Delicious and Granny Smith's. I used to really like Macintosh apples but for some reason the great Macs of 25 years ago are now a local product that is only available in Eastern apple country. The Macs we get now are pale imititation of what was once a great apple

Fuijis, which are sweeter and wetter, with a slightly spicy flavor.

For pies, a mix of apples is best Golden Delicious, a tart apple like the greening Granny Smith, and flavorful varieties like the Pippin, Winesap, Crispin and Jonagold.

I'll have to say Granny Smith too because they bake so well!! But like some of the others have suggested, mixing Grannies with Macintosh, Braeburns, etc. is also good.
