I am limited on my ingredients, i have eggs, oil, milk, sugar, flour, and of course..bananas. Does anyone make it without baking soda or powder?

Any recipe without those two would have to have self-rising flour. You always need leavening. ;-)

INGREDIENTS:

* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup butter
* 3/4 cup brown sugar
* 2 eggs, beaten
* 2 1/3 cups mashed overripe bananas

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Banana Nut Bread with Buttermilk

Ingredients:

3/4 cup butter or margarine
1 1/2 cups granulated white sugar
1 1/2 cups mashed bananas (3 medium bananas)
2 eggs -- well beaten
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup buttermilk
OR
1/2 cup milk -- soured
AND
1 teaspoon vinegar
3/4 cup chopped walnuts

Preheat oven to 325?F. Cream butter and sugar together thoroughly.

Blend in bananas, eggs and vanilla. Sift flour, baking soda and salt
together. Add to banana mixture, alternating with buttermilk and mixing
thoroughly after each addition. Add nuts and gently mix. Pour batter into
greased and floured loaf pan. Bake for 1 1/4 hours, or until done.

Bermuda Banana Bread

1/2 cup butter or margarine
1 cup brown sugar
2 extra large eggs
1 cup mashed bananas
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped walnuts
Cream butter and sugar. Gradually add eggs, then bananas and vanilla. Fold in dry ingredients that have been sifted together. Add nuts. Bake in buttered loaf pan, at 350F for 1-1/4 hours or until loaf tests done. Cool in pan for 10 minutes and then turn out to cool completely.

Bread needs a rising agent like yeast, baking soda or baking powder.
