I need to add 1/4 tsp oof baking soda to my banana bread and I live in the country so a drive to town would really suck. Can I substitute anything?

No subs.... baking soda has a specific purpose..... to release gas all at once so it will rise. You might get away with using baking powder, which is baking soda plus an acid to regulate the chemical reaction,making a slower gas release. You will probably have variations in your bread rising, no taste difference though. Hope I helped.

The idea of baking soda is to rise your bread while it's in the oven. The heat causes a chemical reaction in the baking soda that produces gas. Baking powder can react too quickly, as it has a first reaction as it mixes with wet ingredients, and a second when it is heated.

There really isn't a substitute for baking soda. Baking powder might cause your banana bread to collapse in the oven from over-rising. Just go and get baking soda. It's cheap, lasts practically forever, and is good for so many things.

Baking powder is often substituted for baking soda, but it's usually not as common in the kitchen. So you might be making that trip, sorry.

Its actually bad to substitute Baking soda.
Especially with baking powder, while many think they are the same they are very different.
My advice would be to just leave it out if you dont want to go to the store.
I had to do it once and they came out fine.

I make a buttermilk cake that calls for 1/2 tsp baking soda.
I was out of baking soda and used baking powder instead and the cake came out just as good. I used 1 tsp. baking powder, adding it to the dry ingredients. Now I always use baking powder in that cake. Baking soda works in liquid where baking powder works when heated. The ratio is 1/2 tsp soda equals 1 tsp powder. If the recipe calls for 1/4 tsp baking soda then use 1/2 tsp baking powder. Two options: you either use baking powder as suggested by many others or you substitute the water in your receipe by soda-water or Sprite
