This is something I make every week. If you want simple, you can leave out the wine and the spices and change the canned tomatoes to diced tomatoes. The basics have been covered in the above comments, but just to put it all together here is:

Mama Gravy's Red Sauce
3 Tb Olive oil
1 large yellow onion, diced
2 cloves of garlic minced or crushed
1/4 red wine
1 to 2 TB sugar
2 cans whole roma tomatoes
1 can crushed tomatoes
1 Bay leaf
Red pepper flakes to taste
pinch of fresh Thyme
Salt and pepper

Saute the onion in the oil on low heat for 10 minutes and then add garlic. Saute another 2 minutes being careful not to burn the garlic. Add the rest of the ingredients, including a light salting. Cook slowly, smashing the whole tomatoes as you go. Simmer for an hour or so. Finish with salt to taste.

Note: For extra rich, extra thick sauce:
After simmering an hour pour into large baking dish, drizzle another 2 TB oil and bake at 325 for another hour or two. This is the best sauce for pizza

I use tomato paste to thicken it up, and I cook it for a long time (helps cook the water out of it and reduce, plus adds a little something to the flavor)

To thicken the sauce without compromising its original flavor, when you are heating it, slow simmer it a bit longer and it will thicken without changing the taste.

you can add some cream /creme fraish to thicken up the sauce

or make a roux =
i spoonful of butter, melted.
add one spoonful of flour ,
add 3 tablespoonfuls of milk
cook gently few mins , stir till smooth
add RoUX ---- to spaghetti sauce ,to thicken it

I let it cook down by having it simmer with the top off. If it is very runny, add tomato paste. I like to add red wine, too. Bon Appetit!

Yeah, I let mine simmer on the lowest setting for as long as it takes (I let mine cook for about 4 hours). It's difficult to burn it at this temperature. This does give it time to evaporate, so make sure you start with enough in the first place.

Put lots of Vegies in it and make sure you put Stewed Tomatos
in the sauce!!

The best way is to add enough cans of tomato paste to get the degree of consistency that you want.

What my mom does is to use tomatoe paste. It makes it more thicker and flavorful
