Grilled Portobello-Goat Cheese Pitas:

If the tomatoes are ripe, skip grilling them. Serve with a tropical fruit salad of mangoes, cantaloupe, and pineapple sprinkled with toasted coconut.

1 1/2 teaspoons bottled minced garlic
1 teaspoon olive oil
4 (6-inch) pita rounds
1/2 teaspoon salt, divided
1/4 teaspoon black pepper, divided
1 (6-ounce) package portobello mushrooms
2 medium tomatoes, cut into 1/4-inch-thick slices
1/3 cup (3 ounces) goat cheese
1/2 cup chopped fresh basil

Preheat a grill pan over medium heat.

Combine garlic and oil; brush evenly over pitas. Sprinkle 1/4 teaspoon salt and 1/8 teaspoon pepper evenly over pitas. Place pitas in pan, and cook 2 minutes on each side or until toasted.

Sprinkle 1/4 teaspoon salt and 1/8 teaspoon pepper evenly over mushrooms and tomatoes. Place mushrooms in pan; cook 6 minutes or until tender, turning once. Remove mushrooms from pan. Add tomatoes to pan; cook 1 minute.

Spread goat cheese evenly over pitas. Arrange the mushrooms and tomatoes evenly over pitas. Sprinkle with chopped basil.

Yield: 4 servings (serving size: 1 topped pita)

Well - here is something that is very quick and easy.

Tyson chicken nuggets
Jarred spaghetti sauce
pasta noodles
parmesan cheese or mozerella cheese

Put water on to boil for pasta.
Preheat your oven and bake nuggets following package
directions.
While nuggets are baking cook your pasta.
Drain pasta, place in a baking dish, pour pasta sauce over noodles, placed baked nuggets on top of sauce, spread cheese over top.
Bake at 350 till the cheese is melted.

you should bake an eggplant casserole. Kinda like a lasagna but with eggplant. Kids will love it too. You and your husband can enjoy it with some Dancing Bull Chardonay. Seve with a baguette. Excellent taste! Your family will thank you and its a money saving dinner with the taste of FINE dining!

Manwiches with potato chips....On a side note though. You should consider getting a crock pot. All you do is put in the ingredients and let it cook. After a long day at work you already have a full meal ready when you get home. I love it.

Make Beefaroni

Boil noodles, (but not spagetti noodles)
Fry ground beef and onions.
Add to maccaroni.
Add tomatoe soup
This is all done on stove top, although you can do it as a cassarole.
Very quick and easy, most people will like it.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

Spaghetti Pizza Pie
8 oz. spaghetti, cooked, drained
1/3 cup KRAFT 100% Grated Parmesan Cheese, divided
1 egg, lightly beaten
1 lb. ground beef, cooked, drained
2 cups spaghetti sauce
1-1/2 cups KRAFT Shredded Mozzarella Cheese

PREHEAT oven to 350°F. Toss spaghetti with half of the Parmesan cheese and egg. Place in 9-inch pie plate; press onto bottom and up side to form crust.
MIX meat and spaghetti sauce; spoon into spaghetti crust. Sprinkle with mozzarella cheese and remaining Parmesan cheese.
BAKE 30 minutes or until heated through. Let stand 5 minutes before cutting into wedges to serve.


Stove Top Classic One Dish Bake with Veggies
1-2/3 cups hot water
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch pieces
1 can (10-3/4 oz.) condensed cream of chicken soup
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
1-1/2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1 bag (16 oz.) frozen mixed vegetables, thawed, drained

PREHEAT oven to 400°F. Add hot water to stuffing mix; stir just until moistened. Set aside.
PLACE chicken in 13x9-inch baking dish. Mix soup, sour cream, cheese and vegetables; spoon over chicken. Top with prepared stuffing.
BAKE 30 min. or until chicken is cooked through (170°F).

Chicken Cesar salad, and garlic toast. You can even buy a rotisserie chicken, cooked from the grocery store on your way home. Easy.
