I am tired of fixing the same thing over & over...So what are you having? Recipes would help.

We are having sausage and onion pasta. My own recipe.

Take one polish sausage or kielbasa and cut into rounds with two diced yellow onions pan fry with some olive oil and italian seasonings (the premixed kind works well-but I do add a little more basil and oregano) and garlic (powder or fresh pressed). Meanwhile cook Penne Rigate pasta. When the onions have cooked through add sour cream to mixture to make sauce and mix with pasta, serve warm.

If they're very thick, then I cut a pocket in them. Make some Stovetop Stuffing (per the package) and stuff the chops. Put a little Lawry's marinade in the bottom of a pan (I like Baja Chipolte, Hickory or Mesquite); then the chops and a little more marinade. Cover with foil and bake at 375 about 30-40 min (depending how thick); uncover and cook another 15 min or so. Serve with any additional stuffing alongside; steamed broccoli and a salad or fruit salad........You can also stuff them with feta cheese and chopped spinach; and use Greek Salad dressing instead of the marinade

I am fixing Easy Beef enchiladas. Browned ground beef 1 1/2 lbs, mix in 1 packet taco seasoning, 1 can refried beans and 1 cup water, heat through, then add 1/2 cup shred cheese and 1/2 cup salsa. Take flour tortllias and spoon some into each, rolling it and placing it seal side down in greased 9 x13 pan. Over should be preheated 350, top with 1 cup of salsa and 1 cup of shred cheese. Bake for 20 minutes.

Crispy Fish Tacos w/Pink Chili Mayo

2cups panko bread crumbs
3eggs
2lbs halibut
8 corn tortillas
1/2 head nap cabbage, shredded
peanut oil for frying
lime wedges

To fry the fish: Fill a lg heavy bottomed pot about 1/3 full of peanut oil. Heat oil to 375. While the oil is heating, put the bread crumbs into a shallow dish. Break eggs into another dish, season with S&P, beat them w/2tbsp water. cut the fish into 1 inch wide strips. Dip them into the egg, then coat them well w/bread crumbs. Set aside & let them rest for 10min. Cook the fish a few pieces at a time until golden brown & cooked through, about 3 to 5min. Drain on paper towels.

To make the tacos: Heat a dry cast iron skillet over med heat. Warm a corn tortilla in the pan until it softens, about 30 sec. Place a fish strip on it, top w/some of the shredded cabbage, and a big dollop of Pik Chili Mayo. Squeeze on some lime juice, roll up & eat!

Pink Chili Mayo

1 1/2 cup mayo
1 1/2 cup sour cream
2 canned chipotle peppers in adobo sauce
juice of 1/2 lime
S&P

Put mayo, sour cream, pepper and lime juice in a blender & process to a puree. Refrigerate the mayo for 1/2 hour to let the flavors to blend; taste and adjust seasoning w/S&P

Nachos- preparation time 30 mins

1 lb ground hamberger/turkey
1 small can diced green chiles
1/4 med onion minced
3 cloves garlic fresh garlic minced
1/2 t cumin
1T chile powder
1/4 t cayane (or to taste)
1 lime
1 pound shreaded cheddar or pepper jack cheese
lettuce, tomatoe, cilantro, sour cream

Brown hamburger with all ingredients except the lime and chiles
after browned and drained reduce heat to simmer add chiles and squeeze half lime over misture and simmer 5 minutes,
cover glass plate that can go in oven with your favorite tortilla chips, sprinkle meat mixture over chips, top with cheese and broil until cheese is melted, add sour cream and veggies and squeeze 1/4 lime over top,
Can also be searved on corn tortillas for taco's just don't broil in oven.

*Mayonnaise, Olive oil, lemon juice, sugar-(more than you think is "enough") catsup to turn it pink, s+p.

Ground beef fideo:
1 7oz package fideo mediano (skinner makes a good one)
1 lb grd. beef
garlic salt
pepper
6 cups water
3 tomato bouillon cubs with chicken flavor (Knorr makes the best)
oil (veg. oil is healthier)

In a medium pot bring 4 cups water and 2 cubes to a boil for 2 min & turn heat off. In a pan season ground beef with garlic salt and pepper and brown. When it is finished drain it, don't rinse. While you are cooking the meat, pour oil tocover the bottom of a large (not huge) pot and turn on heat to 8 or almost on high. Pour in the package of noodles. Brown the noodles and stir them almost constantly. Do NOT walk away from the noodles, they can burn from one second to the next, browning only takes about 2 min. As soon as they are brown, stand back and slowly pour in the 4 cups broth. Reduce heat to 3 or medium low, pour in ground beef and cover. Cook for about 8-10 min until noodles are cooked. While this is cooking, make the other 2 cups broth. After the noodles are cooked, pour in the remaining broth and serve.

This is best eaten with corn or flour tortillas. We are a family of 4 and this feeds us all dinner and a lunch for me and my 2 boys. God Bless!

I bought some boneless beef ribs. Going to boil them for about 10 minutes and put them on the grill and baste with Cookies BBQ sauce. Some baked taters and beans for my guys and maybe some steamed broccoli.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.
