Hi. I need help making baked chicken. Can you folks out there tell me how you make your's? What seasonings do you use? Marinades? What side dishes do you serve? Please don't provide me with links to recipes on the internet. I am looking for ideas from real people. Thanks.

1/2 cup butter or margarine
3/4 cup flour
1 1/2 teaspoons salt
2 teaspoons paprika
1/4 teaspoon pepper
2 (3 lb) fryer chicken cut into 8 pieces each

In a large roasting pan (or two 9x13 pans), in a 425° oven, melt the butter or margarine.
Mix flour, salt, paprika and pepper in a heavy-duty plastic bag; shake chicken pieces in the bag, a few at a time, until evenly coated.
In the pan (s), place the chicken, skin side down, in the melted butter; bake 30 minutes.
Turn chicken pieces and bake 15 minutes more until pieces are fork-tender.
I usually make gravy from the de-greased pan juices, using some or all of the leftover flour and some chicken stock.

This goes good with mashed potatoes (use the drippings to make your gravy) and green bean salad or a broccoli casserole

Baked Honey Chicken:

1/4 cup honey
1/4 cup lite soy sauce
1/3 cup minced onion
2 tablespoons grated fresh ginger
2 garlic cloves, minced
1 (3-pound) whole chicken, skinned
Vegetable cooking spray
2 teaspoons paprika
Garnishes: gourmet salad greens, lemon slices

Combine first 5 ingredients in a large heavy-duty zip-top plastic bag; add chicken. Seal and chill 1 hour, turning occasionally.

Coat a rack in a roasting pan with cooking spray.

Remove chicken from marinade, and place, breast side up, on rack. Pour marinade over chicken. Tuck wings under.

Bake, covered with aluminum foil, at 375° for 45 minutes. Uncover; coat chicken with cooking spray, and sprinkle with paprika. Bake, uncovered, 45 more minutes or until a meat thermometer inserted into chicken thigh registers 180°, basting occasionally. Remove from oven, and let stand 15 minutes. Transfer to a serving dish; garnish, if desired.

Yield: 6 servings

Here's a Southern baked chicken recipe for you. Clean your chicken well. Season with garlic salt and black pepper. Place in baking dish, adding about 1/2 cup water. Cover and bake for about 1-1/2 hours at 350 degrees. Make a "rou" (? spelling) out of flour and cold water....Add this to the water in the baking dish with the chicken. Stir it in, and put chicken back in oven till it thickens...usually doesn't take very long. This will make a wonderful gravy for you....You can also add a can of cream of chicken soup to make it more rich tasting. Do mashed potatoes and either a nice green salad, or green vegetable, and you have a great Southern dinner. Enjoy!

Here's my recipe for Baked Chicken.

Marinate overnight in milk -- this will ensure your chicken doesn't dry out while baking.

Put breadcrumbs (I use the Italian style), parmesean cheese, garlic powder, a pinch of salt and pepper in a bag. Add the chicken pieces and shake to coat.

Lightly coat your baking pan with olive oil and bake the chicken for 20-25 minutes at 350 degrees.

Moist and yummy -- I usually serve broccoli, carrots and whole-grain rolls on the side.

It is sooooo simple. (I am assuming you are using a whole chicken)....
First I take out the nasty gizzard stuff from the inside, then I rinse the entire chicken off with water. Next I season with either salt & pepper and paprika, or just plain Goya Adobo seasoning. I put the chicken in a pre-heated oven 350 degrees for about an hour or until the popper pops! I usually put a little water in the bottom for no sticking.

Side dishes: I usually make mashed potatoes which consist of about 5 large red potatoes for 2 people boiled with or without skin in a large boiling pot of water with salt added. when soft (prick with a fork) I drain, add butter, milk, S&P and mix with an electric mixer.

I also make corn/corn on the cob.

For a one pot meal. Just follow directions for chicken and cut up potatoes,carrots, celery, onion and even corn on the cob and add to roaster that has chicken in. Cook all together on 350. Good luck

I have a few that my family loves, the best is:
1) get boneless, skinless chicken breasts, put them in square pyrex dish, then pour Kraft Zesty italian dressing over the breasts, usually a half a bottle. Then bake at 375 for 15 mins each side. Tastes great, just like you had marinated them for hours.
2)BBQ sauce, cook for same time and heat, always a classic.
3) another good one is use McCormicks Montreal steak seasoning add a little butter to keep chicken from being dry, cook same times and heats.

Well, I make a buffalo style baked chicken that is the bomb.

1 c ketchup
1 tbsp worcester
1 tsp garlic salt
2 tbsp canola oil
1/4 c (or to taste) Texas Pete hot sauce

Yummy.

But last night I sprinkled soy sauce on the chicken and then some Old Bay seasoning, and it was pretty good.

As far as sides, it depends on the mood. With the buffalo chicken, I make fries or baked potatoes.
We had mac & cheese last night. Sometimes I make stuffing with baked chicken. Green beans.

I like to rub butter and herbs under the skin before baking. The herbs can be thyme, cilantro, basil, oregano, even bay leaves. Of course, you still need to season the outside with salt and pepper. And for added flavor, put a couple of bacon strips on top of the chicken during the cooking process.

As for sides, I would suggest garlic mashed potatoes, green beans/snap beans, oven-roasted corn on the cob, and some hot/fresh dinner rolls. I am getting hungry. Good luck!

GARLIC ROASTED CHICKEN

PREPARATION
Preparation Time: 10 Minute(s)
Cook Time: 45 Minute(s)
INGREDIENTS
3- to 4- lb. roasting chicken, cut into serving pieces
2 Tbsp. lemon or lime juice
1 Tbsp. Extra Virgin Olive Oil
2 tsp. Garlic Salt
1 tsp. Lawry's Seasoned Pepper

DIRECTIONS

Preheat oven to 400°.
In large bowl, toss chicken, lemon juice and Olive Oil. Evenly sprinkle chicken with Garlic Salt and Seasoned Pepper. In 13 x 9-inch shallow baking or roasting pan, arrange chicken.
Roast chicken 45 minutes or until chicken is thoroughly cooked. Garnish, if desired, with lemon slices.
SERVING SIZE
Serves: 6

I am a vegetarian and not real good at preparing meat for the family so the simpler the recipe the better.

Chicken is the easiest!! And according the my husband and kids, they love this recipe

-4 chicken breasts (I prefer boneless/skinless)
-1 can Campbell's "Cream of Broccoli" soup (regular, NOT reduced fat)
-milk
-lemon pepper
-oil for cooking

mix soup with same amount of milk, add lemon pepper to desired taste. Lightly fry chicken in oil. Once both sides are browned, pour in soup mixture. Cook on low/simmer for 30ish minutes.

I usually serve with a rice pilaf, veggies and or salad.

It is a super easy recipe to make. Depending on how "soupy" you like your chicken, you can increase the amount of soup cans used (obviously increasing milk and seasoning).

As a bit of a side note, I am very health conscious and most Campbell's soups are loaded with preservatives and hydrogenated oils. This Cream of Broccoli is basically their only soup that does not have any junk in it. The reduced fat version has lots of stuff in it that I can't even pronounce!
