If all the vital stats (miles, year, price) are almost similar for a used Jetta and Corolla, which car is better from a resale value perspective? The Jetta is navy blue in color with sun roof and Corolla is golden again with sun roof.

You'll get a better resale out of the Jetta.

The resale value also depends on the model, engine and options.
In general both this cars hold the resale value good for 3-4 years, but then Corolla holds better because it's more reliable.
Jetta is more sporty with classy interior but more expensive to keep. Corolla is more conservative with smooth ride and plain interior, but it's cheaper to maintain and will last longer without problems.

If you want to be "cool", drive a sporty car, and spend a lot of time at the repair shop, get the Jetta.

If you want a reliable, rather ordinary car that will serve you well for MANY years, go for the Corolla.
