I guess if you want the tradtional recipe of steak and lobster, that is the most recognized, but now a days most restaurants will serve a portion of meat with a seafood accompaniment and use that term.
When I was a chef, it ment a filet mignon steak with a Maine or Rock lobster tail, the latter baked in the oven with butter and seasonings, and with the meat cooking it to the persons liking, at home you have to get your timing right, and not have one done before the other, the lobster tail will take 20 minutes if defrosted, and steaks depend on you liking and if you are not sure about filet, you can use striploin or top sirloin as a less expensive cut, so to have every thing ready to go once you start the lobster cooking, and again this you choice, if want to use shrimp, crab or a combination of all 3.
Just sure to have your garnishes like vegetables and potatoes or rice to be finished the exact time of the steak and the seafood is cooked, so if you are preparing it for guests, find out there meat preferences and have everything else ready to be done at tihe same time.
Good Luck

2/5 cup dry white wine, warmed
2 pints (1 liter) simmering vegetable broth

A small bunch of parsley, chopped

When the rice is about 10 minutes from being done, sauté the minced shallot in the remaining oil in a second pot. Add the mushrooms and cook for 5 minutes, and then the shrimp tails. Cook for another couple of minutes, and then add the mushroom mixture to the rice, mixing well. Cook a minute more, and remove the pot from the fire. Turn the risotto out into a serving dish, garnish it with the parsley, and serve at once.
This will be nice as a first course before grilled fish, for example sea bream, which has had a couple of slices of orange slipped into the cavity. Serve the fish with a tossed salad, and serve a white wine with everything. I might go with a Vermentino dei Colli

"surf and turf" is the generic name for any combination of a meat from land and a seafood. Typically it means steak and lobster. But it could mean chicken and shrimp, or steak and crab legs, or just about any other combination.
