Cornish hens are one of the easiest to cook. Just give them a rinse, put them in a baking pan, season with a little salt and pepper, add herbs of your choice if you want (I like a little rosemary) and bake in a 350 degree oven until done (sorry, I don't have an exact baking time at hand, but the skin will turn a nice golden brown. You can use a meat thermometer to check the internal temperature if you are so inclined.).

Stuffed Cornish Hens

INGREDIENTS:
1 package long-grain and wild rice mix, 6 ounces
1/2 cup chopped celery
1 can (about 4 ounces) chopped mushrooms, drained
1/4 cup melted butter
1 tablespoon soy sauce
4 Cornish game hens (approximately 1 pound each)
PREPARATION:
Directions for stuffed Cornish hens
Cook rice according to package directions; cool. Add celery, chopped mushrooms, butter, and soy sauce; toss lightly to mix. Stuff hens; place in roasting pan.
Roast, loosely covered at 375° for 30 minutes. Remove cover and continue roasting Cornish hens for about 60 minutes, or until done. Baste Cornish hens with butter during last 30 minutes, if desired.
Stuffed Cornish hens serves 4.

CORNISH GAME HENS----I used to live in a work camp and every 2 weeks they would serve cornish hens. At dinner time I would ask the Bull Cook for 2 cornish gay men. We would both get a good chuckle.

For quick cooking and shortest prep time I just roast them in the rotisserie. If there's more time I stuff the hens with different combination of herbs or couscous. Really good

Stick them on a beer or soda can, cook on a BBQ gas or charcoal indirect method for 1 hour let it rest about 10 minutes remove from can you now have the greatest moist bird you ever tasted. its imposable to mess this up.

Roast them as you would a chicken or turkey. You can stuff them or not, 325 degrees for about 1 1/2 hrs for 2 of them.

Stuff them with cornbread stuffing. Rub the skin with sage and poultry seasoning. Then bake them in a 350 degree oven for as long as the directions that come with them tell you.

In the oven like a turkey. You can make stuffing and put it in them. Just season, cover with foil, keep basting and your set.
Serve with mashed potatos and the other fixin's.

Brush them with Apricot Jam thinned with orange juice while they bake. Yummy!
