There are two general lines of thought.
First, that Adam and Eve had some unnamed and unmentioned daughters. If you go through the geneologies in the Bible you will notice a few references to daughters and even fewer names of daughters, but we can't just assume that the Biblical-mentioned line only had sons.
Second, that Adam and Eve were special people, people with a soul, but that there were animal humans, those without the "living soul" because of God's special treatment for those original pair of true-humans. By interbreeding with the animal humans, their off-spring had souls too. That is drawn from the problem that Cain raised in Genesis 4:14, "and I shall be a fugitive and a vagabond in the earth; and it shall come to pass, that every one that findeth me shall slay me." Verse 17 has another hint, "And Cain knew his wife; and she conceived, and bare Enoch: and he builded a city." While their "cities" may not have been defined like ours today, likely far from it, that implies people. That could have been, however, merely a place from which his family lived until it became a large population.
Either way, it is possible. If you chart out some simple list of hypothetical family tree, you will find in a couple of pages of figuring that in the first few hundred years two people could become a pretty sizeable crowd, depending on how you count the average family size and the death rate.
Also, don't worry about the incest thing. Consider this, if Adam and Eve had sons Cain, Abel, and Seth, as well as daughters Dinah, Deborah, and Ruth (to borrow from Biblical names). At some point the original dad and mom are going to have to figure, "Well, Cain needs a wife and Dinah needs a husband. Seth needs a wife and Ruth needs a husband" Then you see the answer is obvious. There wasn't a law yet that said it was wrong. Meanwhile, what do you do with Deborah (since Abel is dead)? There wasn't a law yet that said polygamy was wrong and this is how many polygamous families, still existing and historically, found it practical. Consider the example of Judah and Tamar in Genesis 38. A childless widow was supposed to get her satisfaction, as a figure of speech, for a child to carry her on by the nearest relative doing the impregnating. There were no social security programs, old age benefits were the generousity of productive children and without children, who would care for you when you are old an unable to get around? These were good things, things we often don't appreciate today. Frankly, much of which today would be counted as immoral or illegal, but they had important purposes when humanity was fresh and new.

While I'm not even going to get into the origin of human kind, the Bible talks about 2 sons specifically, and Adam and Eve, did have more kids than just the 2 of them including some daughters.

The Bible only mentions, Cain, Abel, and later Seth by name, however, 'Adam went on to have sons and daughters.' There was no risk of birth defects because they were a lot closer to perfect being as to how their time in an imperfect world, and exposed to far less harmful environments would have made it impossible for everyone to simply be as unhealthy as we are today. That sort of thing takes time. Besides, even today, although incest is looked down upon, and I do not condone it, sex with a relative does not automatically guarantee birth defects today, where we have a much higher risk of something going wrong than back then.

They also had another son named Seth.
Genesis 4:25 Adam lay with his wife again, and she gave birth to a son and named him Seth, saying, "God has granted me another child in place of Abel, since Cain killed him".
And others...
Genesis 5:4 After Seth was born, Adam lived 800 years and had other sons and daughters.
But notice that "Cain lay with his wife" in Genesis 4:17 which was before all the other children were born. This subject of where the wives came from is just not something we are told in the Bible.

Down syndrome is not caused by incest and as a proud mommy of a young boy with Down syndrome, I resent your inference. Before you start making assumptions about where certain genetic conditions come from, perhaps you might want to do a little reading on the subject.

Well there was a lot and I repeat a lot if incest. Because Adam and Eve had more children than just those two. So Cain and Able married their sisters.
So basically there was a lot and I repeat a lot of incest for a while.

Gen 5:4 "And the days of Adam after he had begotten Seth were eight hundred years: and he begat *sons and daughters*:"
So those sons and daughters married, and had more kids. Only the sons are recorded, because the inheritance rights were from male to male.

Well, if you read the bible a little closer, they had more than just 2 kids (sorry if that sounded rude). They were the only ones in the story, but it said that after that they had more kids. Oh, and just to let you know, that sounds liek incest, but it was allowed back then, until things started going crazy. Then you had to marry people from different areas...
