My ex used to do the same thing. He said he has to close his eyes so that he can concentrate and last longer. He said watching me turns him on so much that he can't hold it as long. Some guys get excited by the way your body is moving and the way you respond to what you feel. I think they just go into sensory overload.

That's odd.
Your fiance should be looking at you while he's having sex with you. I don't like it when I'm having sex with a woman and she has her eyes closed, either. If someone has their eyes closed I always wonder if they're thinking about someone else. It takes away from the intimacy. If you're engaged to this person they should have no problem looking at you at any time.
Maybe he "skeeted" because when you told him to open his eyes it surprised him.
