Hog jowls are pigs stomachs. There are many ways to prepare them. Clean them well. My favorite way is to first roast them in a big black cast iron pot with onions and garlic on the bottom, to prevent burning and add flavor, and seasoned hog jowls on top. Cover with lid and roast at 350 until tender, about 4 hours. Dice meat and make tacos or cook with potatoes and green salsa or salsa de tomatillos. Cook like a stew. Slow low temp. Serve with Spanish rice and beans.

I always thought they were the cheeks of a pig but now I'm not so sure.... Anyway, I use them when fixing beans (pintos or black eyed peas) and greens they really add good flavor.

I use them for soup base. Adds great flavor to Pea, Lentil, or any bean based.
