FRIED OKRA SALAD

1 medium onion diced small
1 medium tomato diced small
white vinegar
1 - 1 1/2 pounds fresh okra
(may use frozen okra, thawed)
corn meal

Dice onion and tomato and place together in small mixing bowel, cover with vinegar and set aside. Roll cut okra in corn meal and fry in hot vegetable oil until golden brown. Drain okra on paper towel.
Pour off the vinegar from the tomatoes and onions then combine with the okra in a serving bowl.

Serve warm.

Great dish for pot luck!

I don't think I've ever had steamed or boiled okra. The only way that I've cooked okra is fried. It is so good.

However, today I seen an article in the paper about grilling okra. Never heard of it. It says to put on it salt, white and black pepper, granulated garlic, and olive oil and grill for about 10-15 minutes on each side. Haven't tried it, but intend to. Sounds really good.

Southern Okra

This recipe dates back generations in my family. I enjoy it so much because I can use the fresh vegetables that are so abundant here in the South.

SERVINGS 6 METHOD Other stovetop PREP 10 min. COOK 20 min. TOTAL 30 min.

INGREDIENTS


1 tablespoons sugar

1 teaspoon all-purpose flour

1/2 teaspoon salt

1/2 teaspoon pepper

2 cups sliced fresh okra

Boiling water

2 tablespoon vegetable oil

1 medium onion, chopped

1 medium green pepper, chopped

3 medium tomatoes, peeled and chopped

Cooked rice, optional

DIRECTIONS

Combine the first four ingredients; set aside. In a covered saucepan, cook okra in boiling water for 10 minutes or until tender. Drain and set aside. In a skillet, heat oil over medium. Saute onion and pepper until tender. Stir in sugar mixture and tomatoes, cook for 5 minutes. Add okra and simmer until heated through, stirring as little as possible. Serve with rice, if desired. Yield: 6 servings.

INGREDIENTS:
3 slices bacon
1 (16 ounce) package frozen cut okra
1 onion, chopped
1 green bell pepper, seeded and diced
1 medium tomato, diced

1/3 cup white sugar
1/4 cup corn oil
1/4 cup white vinegar


DIRECTIONS:
Place bacon in a large skillet over medium heat. Cook until evenly browned, then remove to paper towels to drain. Pour off most of the bacon grease, leaving a thin coating on the pan. Add okra to the bacon grease in the skillet, and fry until tender, about 5 minutes. Transfer the okra to a salad bowl, and toss with the onion, green pepper, and tomato. Crumble in the bacon.
In a small bowl, whisk together the sugar, corn oil, and vinegar until the sugar has dissolved. Pour over the salad, and toss to coat. Chill for 30 minutes before serving.

The best way to cook okra is frying it.

Slice your okra in about 1/2 inch pieces. Mix up a half and half mixture of cornmeal and flour, add salt and pepper. Add this mixture to sliced okra and stir so that okra is lightly coated. Fry in a cast iron skillet (a regular skillet will do) with veg. oil (about an inch of oil in skillet) until the okra is golden (do not stir the okra alot while it is frying). Drain okra on paper towel. *Sometimes I add some diced green tomato to okra mixture before frying - it is very tastey and adds a nice tang.

Neither steam or boil. Saute' in olive oil. Until the okra is fork tender. Saute' minced garlic and a tiny bit of onion with it, salt and pepper and there you go...

Buy fresh looking green pods that are smallish with little spotting on them. Carefully cut the tops off and saute' whole.

The Southern way to make okra is to cut up in 1/2 inch lengths, toss in beaten egg and dredge in cornmeal. Salt and pepper this and then fry in olive oil until crisp.

When I have large amounts I add oil then the okra and it takes about two hours to cook down with a lot of stirring. I also add vinegar when it starts to slime. Your okra will get a little darker when ready.

DO NOT ADD WATER in Okra when cooking it !!

it will become sticky and gueey !!

okra is one of my favourite vegetables and you can cook it nice and crisp with onions - the indian way! buy some indian roti and have this dish with curds and hot rotis ! YUMMY..........

heres a recipe from Tarla Dalal's website :
BHINDI DO PYAZA
"Do pyaza" denotes presence of double the quantity of onions than that found in any other style of preparation. The curds added towards the end of this dish add more sharpness to this dish.

Cooking Time : 15 mins.
Preparation Time : 10 mins.

3 cups bhindi (ladies finger), sliced
1½ cups onions, chopped
3 teaspoons cumin seeds (jeera)
1 teaspoon nigella seeds (kalonji)
¼ teaspoon turmeric powder (haldi)
3 teaspoons ginger paste
1 to 2 green chillies, chopped
¾ cup thick curds, whisked
3 tablespoons oil
salt to taste
1.Heat the oil in a pan, add the cumin seeds and nigella seeds and allow the seeds to crackle.

2.Add the onions, turmeric powder, ginger paste and green chillies and cook till the onions are tender.

3.Add the bhindi and salt and cook over a medium flame till the bhindi is tender.

4.Add the whisked curds and cook till the curds dry out.

5.Serve hot with parathas or rotis.

wash; cut off stems. Cut into 1/2" slices. ( 2 cup slices)

Cook, covered, in a small amount of boiling salted water for 8-10 minutes or until tender.

Place in a casserole with 2 tablespoons water. Microwave,covered, on 100% high power for 3-5 minutes.

cut into small pieces, salt and pepper, roll it flour and fry in oil til golden brown......fabulous this way

another way is to cut it into pieces. Add about 3 tablespoons of oil in large skillet. salt and pepper okra pieces put in hot skillet and turn heat to medium. cook it till it doesn't look slimey. Add a little more oil if needed. Be sure to keep it stirred to keep it from sticking. (about 30 minutes) It will be a dark golden color..........this is fantastic.......I'm a southerner. I know how to cook okra
