"This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut. "
INGREDIENTS:
1 1/2 cups peanut butter
6 cups confectioners' sugar
1 cup butter, softened
1/2 teaspoon vanilla extract
4 cups semisweet chocolate chips

DIRECTIONS:
Blend peanut butter, sugar, butter, and vanilla. (Dough will look dry).
Roll into 1 inch balls and place on a wax paper lined cookie sheet.
Poke a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until hard (1/2 hour).
Melt chocolate chips in the top of a double boiler (use very low heat, not much hotter than tap water or the chocolate will get grainy. This will take awhile).
Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes.
Put back on the wax paper lined cookie sheet and refrigerate 2 hours.

1 1/2 cups peanut butter 1/2 cup margarine or butter 1 lb powdered sugar 1 teaspoon vanilla 1 1/2 cups chocolate chips Crisco Mix peanut butter, margarine or butter, powdered sugar, and vanilla in bowl (It helps to soften the margarine). Shape into 1" balls. Refrigerate balls. Meanwhile, melt chocolate with a bit of crisco (so the chocolate will harden. Without crisco, chocolate will remain soft.) in double boiler. Insert toothpick into refrigerated balls and dip into chocolate, leaving small area resembling a buckeye. Cool on wax paper and store in refrigerator or freezer.

Here's one - we love it!
1/2 cup light corn syrup (or golden syrup)
1/2 cup sugar
1/2 cup peanut butter
1/2 cup semi-sweet chocolate chips or milk chocolate chips
8 cups popped popcorn
1/2 cup salted peanuts
Preheat oven to 300F degrees.
Grease a large roasting pan.
Combine popcorn and nuts in prepared roasting pan.
In medium pan melt together corn syrup and sugar.
Add chocolate chips and stir until melted.
Add peanut butter and stir until mixed.
Pour over popcorn and toss well to coat.
Bake, stirring frequently for 30 minutes.
Loosen popcorn from pan and allow to cool slightly in pan. (I cooled mine in the refrigerator.).
Remove to a wax paper lined cookie sheet to cool completely.
Enjoy!
