What about trying a marinade in teriyaki sauce? Its good on its own, or it can be served with rice and veggies and makes a great meal!
For the grill my fiance does these chicken appetizers....cut small pieces of boneless skinless breast and wrap a half of a piece of bacon around it. You can secure it with a regular toothpick, or put a couple on a kabob stick. He then puts some b-b-q sauce on them, but you could do it plain or with any other marinade.
Today I'm making a really easy homemade chicken noodle soup. Cook the chicken in a pan with just a little butter or oil. While the chicken is cooking add pieces of carrots, celery, and some onion if you like it. Once the chicken is completely cooked, dont drain it....just add water and let it simmer, say for an hour or so. When you're about 20 minutes from dinner add egg noodles. And of course you can season it for taste - salt, pepper, seasoned salt, whatever you like and tastes good to you. Its a pretty easy soup but its really good! The flavors from when you're cooking the chicken, plus your own seasonings, give it a good chicken taste, but if you want more you just have to add a chicken bouillan cube.
If you're cooking in the house you could always try the simple shake-n-bake thing, which gives a crispy coating that I loved as a kid. You can also cut a boneless chicken breast in the middle and stuff it with stuffing, then just bake in the oven in a pan with salt, pepper, your favorite seasonings, etc on top.

Oi! There are so many things that you can do with chicken (grilling it is excellent). You can try marinating it in teriyaki sauce or simply season it with seasoned salt and pepper (a classic ^_^) right before cooking it...then serve it with various dipping sauces (ie. honey mustard...sweet and sour...barbecue).
I don't usually grill chicken, but I usually cook it in a pan with the seasoned salt and pepper (sometimes i batter it up with a mixture of flour and seasonings, dip it in egg, and fry it). If there are any leftovers, i chop up the chicken and make a chicken salad or even fajitas.
If you're trying to get away from grilling, you can try chicken pot pies or baking it with potatoes and onions. It's even good with stuffing :) I think I could go on forever about what you can do with chicken ^_^

Take a 13x9 baking pan or dish and fill it half way with Chicken broth. Take your chicken and salt and pepper well. Add grill mates Steak seasoning or chicken seasoning and finally add FRESH thyme. Bake at 350F for about 45 minutes, depending on the cut of the chicken. Boneless chicken breasts take about 20 or 25 minutes depending on thickness. ENJOY!!!
You can also grill this on an indoor or outdoor grill just watch closely and it is done when the juices run clear.

Have you ever made a sauce out of 1 part fresh lemon juice and 1 part melted butter? Yum!
You can also use jams or preserves as a baste on the meat. Just heat the jam until it starts to turn to a liquid and brush it on the meat the last 30 minutes. Apricot and Peach work great.

Raspberry vinaigrette makes a great marinade. And you can strain it and reduce it to make a sauce after marinating the chicken. Add honey to taste. Also works for pork and fish. I think the pink colour looks beautiful on the plate and served with jasmine rice and baby veggies. Even a picky daughter will love it.

How about cutting the raw chicken thin so that you can roll up some pesto inside of it and make chicken pinwheels to bake in the oven? Stuffed chicken is my favorite.
I also like to grill a bunch, put it in the fridge, and then cut it into strips to put into salad.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

My most favorite marinade is about a 1/4 cup of lemon juice and 2 tables spoons of olive oil add basil, oregono, garlic and parsley- marinate for 30 minutes and then grill... its delicious- all my friends love it.

salsa marinara=
1 jar of salsa
1 jar of cheese salsa
3 cups of your own marinara or my favorite is grandma garden style ragu .
cook the three together for 30 minutes at a simmer bringing all the flavors together you ten add a cup of grated parm. cheese and then cook for 30 more min. stirring allot .
you can grill the chicken
you can boil it with garlic salt
you can cook it in the salsa marinara
if you grill or boil just put the chicken on top of a rice and pour marina over it.. i worked in a bistro and had to come up with a dinner to put on the special board for sinco demio and this is what i did now four restaurants around me use it on there main menu and its called Nicky's salsa marinara....lol...how news flys

I like to dip chicken breast in egg and then coat with Italian Style bread crumbs Like Progresso and then spray with butter flavor cooking spray and bake 375 for about 30 minutes. You can have salad and pasta coated with butter garlic and Parmesan, my kids love it and it's easy.
