This is the best and most tender brisket you'll ever eat.

SAVORY BRISKET
1 (7 to 10 pound) brisket
1 envelope dry onion soup mix
1 (12 ounce) can cola

Heat over to 400 degrees. You can remove most of the fat from the brisket, but leave a thin layer on the top.
Set brisket in large roasting pan. Sprinkle soup mix over meat. Pour cola over this.
Roast, uncovered, for 30 minutes. Reduce temperature to 300 degrees, covered with foil, and cook 3 to 4 hours, depending on the size of the cut. Remove cover and roast 1 hour more. Brisket is done when meat pulls away easily and when meat feel soft when a knife is inserted.
May be cooked ahead and frozen or refrigerated for up to 3 days.

When the meat is finally done, remove it from the pan and put on a cutting board to rest. Pour all the wonderful juices into a measuring cup. When the fat rises to the top you can skim it off. For really tender slices of brisket, slice across the grain of the meat. You do not want to pull it into strips. Just slice off nice pieces and put them on a platter, pour some juice over the top and serve with lots of good bread for sopping up the juice.

Enjoy!

If you have a pressure cooker you can cook a brisket with all the veggies in a little over an hour just like corned beef and cabbage dinners. Pressure cooking is fun, safe and very fast and is a great tool you will wonder how you ever did without. It saves about 75% to 80% of cooking times over anything else and is way better than a microwave which you really wouldn't want to try to use for that brisket.

I cook mine in my crockpot for 6-8 hours. Put the brisket in the crock pot and add 1 bottle of beer and 1 bottle of your favorite bbq sauce. Add enough water to just cover. When the meat is tender, remove from the liquid and slice for sandwhiches.
