1 (7-ounce) package mung bean (cellophane) noodles
1/4 cup canned low-sodium chicken broth or chicken stock
2 teaspoons cornstarch
3 tablespoons soy sauce
1 tablespoons hoisin sauce
2 teaspoons packed light brown sugar
1 teaspoon dry sherry, optional
2 tablespoons peanut or vegetable oil
3 tablespoons sliced on the bias green onions, plus more for garnish
2 cloves garlic, minced
2 teaspoons minced gingerroot
1/2 teaspoon red pepper flakes
1 pound boneless, skinless chicken breast halves, cut into thin strips
1 (14-ounce) bag frozen mixed vegetables (broccoli florets, julienne red peppers, sugar snap peas and water chestnuts), about 3 cups, thawed

While assembling the other ingredients, soak the noodles in hot water to soften, 10 to 15 minutes. Drain and set aside.
To make the sauce, in a bowl, whisk together the chicken broth with the cornstarch. Add the soy, hoisin, sugar, and sherry, if using, whisk, and set aside.

Heat a wok over high heat. Add the oil and when hot and nearly smoking, add the green onions, garlic, ginger, and red pepper flakes and cook, stirring, for 10 to 15 seconds. Add the chicken and stir-fry until turning opaque and nearly cooked through, 3 to 4 minutes. Add the vegetables and stir-fry for 1 minute. Add the sauce, stir and toss, cooking until the chicken is all the way cooked through and the sauce is thick, about 2 minutes. Remove the chicken and vegetables from the pan. Add the noodles, toss, and cook to warm through, 30 seconds to 1 minute.

Transfer the stir-fry to a platter and garnish with additional green onions. Arrange the noodles on the side and serve immediately.

Best Ever Chix Casserole
4 skinless, boneless chicken breasts
1 (8 ounce) can water chestnuts, chopped
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 cup cornflakes cereal crumbs
1 cup mayonnaise



Recipe
Preheat oven to 350 degrees F.
In a large pot, boil the chicken until tender. Cut the breasts into cubes or small pieces.
In a large bowl, combine the chicken pieces with the water chestnuts, onion, soup, most of the crushed corn flakes and mayonnaise. Mix well.
Pour mixture into a 9x13 inch baking dish. Sprinkle the rest of the crushed corn flakes on top of the mixture. Bake in the preheated oven for 1 hour.

Makes 4 servings.

serve with Pabst Blue Ribbon beer, in a can, now that's good eatin'!!

Try the following random ideas:
1) Steam the chicken - sprinkle with smashed ginger, green onion and salt to taste
2) Curry Chicken - marinade in basic ingredients adding a little extra curry powder and cook in a sauce made of chopped onion, ginger, garlic, fresh coriander and green chilli (optional - add if you like)
3) Deep fry the chicken especially Wings /Drum Sticks after basic marinade
4) After basic marinade (adding whatever you like) wrap the whole chicken with a cooking paper and bury it in raw sea salt or sand which should be on a wok or frying pan, and heat it until cooked
5) Yogurt Chicken - Marinade chicken pieces in two table spoons of yogurt, little curry powder, green coriander, green chilli, a piece of ginger and a clove of garlic chopped; Cook in low flame (using little oil as base is optional).
6) Minced Chicken Puff - Marinade minced chicken adding little curry powder, a piece of chopped ginger and garlic, fresh coriander and salt to taste; Get any ready to use wrapper; Place the chicken mix on a piece of wrapper; close it well and then deep fry in low flame;

Bread the chicken in Panko Bread Crumbs, and deep fry in wok. Buy a bottled sauce like General tso. Steam some broccoli and serve with rice. You will have a crispy chicken, in a popular sauce, with a variety of color on the plate. I make my own sesame sauce, and make a similar dish.

I like to add sesame seeds, or to add a sauce of peanut butter,lite coconut milk, and mild curry powder for some Thai flavor! I also like to experiment with vegetables or veggie combinations that I haven't put together before. Sometimes I'll add pineapple. Never forget how yummy a splash of sesame oil can make a stir fry.

sautee your chicken and remove from pan. Drain the pan juices. Add one can of creamy coconut milk, a half a cup crunchy peanut butter and one tin of red curry (from the asian market or asian section of a regular grocer) to the pan you used for the chicken. Add salt and a little sugar to taste. Heat, stirring, until it's all dissolved and mixed together. Return the chicken to the sauce. Add 1-2 avacados, sliced and a big handful of fresh basil leaves. Remove from heat. Spoon chicken and sauce over a plate of steaming jasmine rice. Top with salted cashews and serve!

There are a lot of Pad Thai mixes at the grocery store. I whip up a "typical" stir fry and then mix in the pad thai noodles with their peanuty taste - turns blah into divine!

what do you put in your stir fry, i do baby corn,green onions, water chestnuts, garlic,bean sprouts. You can also add peanut butter and peanuts to your chicken. Annie Chun's is a great brand if you feel like getting lazy and just adding a couple things. Also use peanut oil, it has a higher burning temp, so you can get your pan hotter...

It's nice to have crunchy things in a stir fry, such as crisp snow peas, or tiny carrots. A nice twist is to get some of those crunchy noodles from a chineese resturant and throw them in, too

I would suggest try putting every vegetable that you like and every kind of meat (not too much) that you like in it. Then eat it and if there is a taste in it you don't like then just taste to see what it is and then next time you make it don't put it in. I bet you can make the best stir fry for your taste.
