Pecan Pie
4 eggs
1 1/4 c. southern cane syrup (or dark Karo)
1 1/2 c. broken or whole pecans
1 c. sugar
4 tbsp. butter
1 tsp. vanilla
Boil sugar and syrup together 2 or 3 minutes. Beat eggs, not too stiff. Pour hot syrup in slowly, stirring. Add butter and vanilla. Put pecans in pie shell, pour syrup over top. Bake in moderate oven about 45 minutes or until set.
Bourbon Yams
4 med. size yams or sweet potatoes
1/3 c. orange juice
1/3 c. brown sugar
1/3 c. bourbon
1/2 c. broken pecans, unsalted
2 tbsp. butter
Boil yams, unpeeled until almost tender; do not overcook. Cool, peel and cut in one inch slices. Arrange in buttered glass baking dish or casserole.
Combine orange juice, brown sugar, bourbon and pour over yams. Dot with butter, top with pecans. Bake in 350 degree oven about 20 minutes until heated through and yams are tender. If the pecans are toasted first before adding to the casserole it improves their flavor. Serves 4 to 6.
Fried Catfish
2 1/2 lb. catfish fillets, skinned or 12 whole, small baby catfish, dressed
1 c. stone ground white cornmeal
1/4 tsp. black pepper
Corn oil for frying
Wash and dry fillets on paper towels. Cut into 3 inch pieces or keep whole and dressed. Place cornmeal and pepper in a plastic bag. Add fish, a few pieces at a time, and shake well to coat. Spread in single layer on sheet of wax paper and place in refrigerator to chill for 1 hour before frying. In a deep, 12 inch skillet or Chinese wok, heat oil (about 1 inch deep) to 370 degrees. Add fish, a few pieces at a time, and cook for 2-3 minutes on each side until brown. Drain well on paper towel and serve hot. Serves 6.
Chess Pie
1 c. old fashioned dark brown sugar, firmly packed
1/2 c. granulated sugar
1 tbsp. flour
2 eggs
2 tbsp. sweet milk
1/2 c. butter
1 tsp. vanilla
Mix the two kinds of sugar and flour thoroughly. Beat in eggs, milk and vanilla. Add melted butter. Pour in pastry lined pie pan. Bake in moderate oven (375 degrees) until set, approximately 45 minutes. Good served slightly warm and with whipped cream
Corn Chowder
1/2 lb. bacon, diced
1 med. onion, chopped
1/2 c. chopped celery
2 tbsp. flour
4 c. milk
1 (1 lb.) can cream style corn
1 can tiny whole potatoes, diced
1/2 tsp. salt
1/8 tsp. pepper
Parsley
Paprika
Fry bacon until crisp. Remove and drain. Save 3 tablespoons drippings. Saute onions and celery in drippings. Cook until tender. Remove from heat. Stir in flour. Cook until bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir one minute.
Stir in corn, potatoes, salt and pepper; heat through. Stir in bacon. May sprinkle each serving with parsley and paprika. 6 servings (1 cup each).
This cake is a staple-and is to die for!!
Southern Coconut Cake
2/3 c. butter
1 3/4 c. sugar
2 eggs
1 1/2 tsp. vanilla
3 c. sifted cake flour
2 1/2 tsp. baking powder
1 tsp. salt
1 1/4 c. milk
Cream butter, add sugar gradually creaming until light. Add eggs and vanilla, and beat until fluffy. Sift dry ingredients together. Add to creamed mixture alternately with milk. Beat well after each addition. Beat 1 minute. Bake in 2 greased lightly floured 9 x 11 1/2 round pans at 350 degrees for 30 to 35 minutes. Cool 10 minutes; remove from pans. Cool. Split layers to make 4 layers.
Lemon Filling
3/4 c. sugar
1 egg yolk (slightly beaten)
1/4 c. cornstarch
1 c. water
1/4 tsp. salt
1/3 c. lemon juice
2 tsp. grated lemon rind
Combine sugar, cornstarch and salt in top of double boiler, set aside. Stir together egg yolk, water, and lemon juice. Add sugar mix gradually, blending well. Cook over boiling water, stirring constantly (5 minutes) or until thick. Remove from heat. Add butter and lemon rind. Makes 1 3/4 cups.
Marshamallow filling & frosting
1 1/2 c. granulated sugar
1/2 c. water
Whites of 2 eggs
1/4 tsp. baking powder
2 tsp. lemon juice
6 lg. marshmallows
Boil sugar and water to 238 degrees F. or until it spins a thread. Add marshmallows cut into pieces. Don't stir into syrup, pour slowly into stiffly beaten whites of eggs. Beat until smooth and thick enough to spread without running. Add baking powder and lemon juice. Sufficient for large loaf or 2 layer cake.
Fill split layers with lemon filling and then ice with marshmallow icing. Sprinkle coconut over cake and on sides.
Flaky Biscuits
2 c. flour
1 tbsp. baking powder
1/2 tsp. salt
1/2 c. chilled vegetable shortening
3/4 c. cold milk
Preheat oven to 425 degrees. In large bowl combine flour, baking powder and salt. With pastry blender or 2 knives used scissors- fashion, cut in shortening until mixture resembles coarse crumbs. Stir in milk just until dough holds together. On lightly floured board knead gently about 1 minute. With floured rolling pin roll dough 1/2 inch thick. With floured biscuit cutter cut dough into 2 1/2 to 3 inch rounds. Place 1 inch apart on ungreased cookie sheet. Bake 12 to 15 minutes or until lightly browned. Serve hot. Makes 10 biscuits
Southern Pound Cake
3 c. plain flour, sift twice
3 c. sugar
6 eggs
1/2 tsp. vanilla
1/4 tsp. salt
2 1/2 sticks of butter
1/2 tsp. lemon extract
1 tsp. baking powder
1 c. whole Carnation milk
In a medium bowl combine the dry ingredients and mix on low speed for 30 seconds to blend. In a large bowl combine the butter and sugar. Beat in each egg one at a time until smooth. Add the lemon and vanilla. Gradually add the dry ingredients to the egg-sugar combination.
Pour into fluted tube pan or loaf pan. Bake at 350 degrees for about one hour (do not look at cake until one hour has passed). Test cake with a toothpick. Makes a very large cake. You may sprinkle top with powdered sugar.
Fried Oysters
1 doz. large size oysters
2 eggs
2 tbsp. cream
2 tbsp. flour
Dash of paprika, salt and pepper to taste
1 c. cracker meal
1 1/2 c. cooking oil, (10 to 12 inch fry pan)
Beat eggs and cream, stir in flour and seasonings and mix until smooth. Dip oysters in batter then in cracker meal, well coated. Fry in hot oil until golden brown about 15 minutes, drain them on paper towel and serve hot.

Crock Pot Salmon Bake components 2- 15 oz.. cans Salmon 4 cups Bread crumbs a million can Tomatoes a million chopped green pepper a million teaspoons Lemon juice a million can Cream of onion soup a million can Cream of celery soup 4 properly overwhelmed Eggs a million tsp. garlic powder a million tsp. Greek seasoning 2 rooster ,overwhelmed, bouillon cubes a million/4 cup milk education Grease crock pot liner. combine all components different than celery soup & milk. Pour into crock pot. conceal & cook dinner on low warmth for roughly 5 hours. combine cream of celery soup with a million/2 cup of milk and warmth in saucepan. Use as a sauce for salmon bake.

Chile - oohhoo is you bees akin fo it. Southern cooling has too much sugar and leads to f-a-t. In the south, they always throw a handful of sugar in the pot no matter what they are cooking.
