Guacamole! You dont cook the avocado though. Google Guacamole recipe.
It's easy. Once you peel and remove the pit, you mash it and then fold in chopped onions and tomatoes etc.

Hi, Use the small avocados. Get about 3, let them ripen at room temp. until soft. about 4 days. Test at stem end. Very important to let them get soft. Like a pear
Put in food processor or with fork, mess up.
Add chopped up onions, chilie powder, cumin. garlic; powder is fine.
salt,
a little lemon juice because it will darken without it.
add a little mayonise and sour cream (very few people use these but I am often asked for the recipie.)
a few drops of hot sause.
What else is nice is the little can of green chillies. Add about 1/2 can. Put rest in baggie in freezer for something later.
Dip a chip in and taste.
Am sorry I cannot give specifics on how much of each but it depends on how many avocados I use and I taste it as I go.
Roughly start with 1/4 teaspoon of spices. .1 teaspoon of lemon and about 2 Tb. of mayo and sour cream.
You can also buy fozen dip and taste it.
My favorite way to use avocado is. Once it gets ripe, Add 1/2 inch cubes to a green salad.

my recipe for my famous avocado dip
get 3 avocados and get a knife and cut it in half, take out the seed, then get the knife again and make big squares in the avocado. get a spoon and scoop the avocado off the skin. cut one large tomatoe in big squares, put that in abowl also, cut cilantro and put it in also, cut half of a small purple onion, and dice it up real small, add that also, one teaspoon of salt, and someblack pepper, top it off with half a lime squeezed over the dip, and mixing it carefully without smashing the avocadoes.
taste great with lime chips from lays.

my family and I love avocado, you can eat the with everything.
Use them in quesadillas, with rice, on sandwiches, 2 cans of Wolfe chili, one bag of tostitos and a couple of avocados, great for munching during the game. avocados with bread, tortillas, chips.

one thing i always love doing with avacados, and is a big hit with others is to simply slice the avacados legnth-wise, in a plate drizzle some olive oil on it, sprinkle a bit of red pepper (not the crushed pepper, but the powder) and some black peppers and squeeze fresh lemon juice on it... so tasty and simple!
