I imagine it's the same reason why a Muslim will kneel when in prayer. Or just a sign of glorification to their beloved Jesus, Mary, or John ect.

We are not kneeling and adoring statues. We are kneeling and genuflecting to Christ present in the Sacrifice of the Altar. We believe the Eucharist truly becomes the body of Christ.

The Catholic Church is the oldest denomination of Christianity, so it might seem "old fashioned". It's out of respect for who the statues represent. They're not actually worshipping the crucifix, but they're worshipping Jesus, and it's a way of remembering how Christ died for them.

The way it was explained to me, statues in the church are along the lines of keeping photographs of loved ones, reflecting on their value to you. Of course the photographs are not the real thing, and neither are the statues.
