Pineapple Upside Down Cake
INGREDIENTS:
3 tablespoons butter
3/4 cup brown sugar, firmly packed
6 slices pineapple or 1 can (20 ounces) can of drained pineapple chunks
maraschino cherries
pecan halves

.
1/2 cup butter
1/2 cup sugar
1 egg
1 1/2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
PREPARATION:
In a 9-inch square cake pan, melt butter; sprinkle with brown sugar. Arrange pineapple and cherries and nut halves on sugar, making a design.
Make cake batter.
Cream 1/2 cup butter; gradually add 1/2 cup sugar and beat until light and fluffy.
Add egg and beat well. Add sifted dry ingredients alternately with the milk; beat until smooth, ending with dry ingredients. Pour over pineapple design. Bake at 375° for about 35 minutes. Let cake cool for about 5 minutes before turning out onto a serving plate. Serve warm with whipped cream, if desired.

This is the recipe handed down to me by my grandmother. She used to make it for the family back in the 1950's. It is outstanding
.
Pineapple upside down cake
first, prepare the pan (she used a 10 inch cast iron skillet)
Melt 1/3 cup butter in skillet
Sprinkle 1/2 cup brown sugar evenly over butter
Arrange drained, canned pineapple slices on the butter/sugar coating.(save the juice). Place Maraschino cherries and pecan halves between the pineapple slices (put a cherry in the middle of each pineapple slice and the pecans in between.)
Make the Cake Batter
Beat until thick and lemon colored (about 5 min) 2 eggs.
Gradually beat in 2/3 cup sugar
Beat in 6 tablespoons juice from pineapple and 1 teaspoon vanilla flavoring.
Sift together 1 cup sifted flour, 1/3 teaspoon baking powder and 1/4 teaspoon salt
Pour over fruit.
Bake until wooden toothpick thrust into center of cake comes out clean
Immediately turn upside-down on serving plate.
Do not remove pan for a few minutes. brown sugar mixture will run down over cake instead of clinging to pan
serve warm with whipped cream or plaiin
Bake 350 degrees for 45 minutes

1 fresh pineapple - peeled, cored and cut into rings

Preheat oven to 400 degrees F (205 degrees C).
Melt the butter. Brush a little bit of the butter on the inside of a 9 inch cake pan.
Mix 5 tablespoons of the butter with the dark brown sugar and 1/4 cup of the pineapple juice. Place this mixture in the bottom of the cake pan. Arrange the pineapple rings on the brown sugar mixture in a decorative pattern (be creative). Set pan aside.
Stir together the flour, salt, white sugar, and baking powder.
Separate the eggs. Beat the whites until stiff but not dry.
Beat two of the egg yolks until lemony yellow. Stir in the remaining 1/2 cup pineapple juice, vanilla, and remaining melted butter. Add this mixture to the flour mixture. Gently fold in the egg whites. Pour batter over the top of the brown sugar and pineapple rings.
Bake at 400 degrees F (205 degrees C) for 30 minutes. Let cake cool in pan for 10 minutes then cover pan tightly with a serving dish and invert so that the pineapple side is up.

Arrange 8 pineapple slices in a single layer over the brown sugar mixture (your 9-inch skillet should accommodate 8 slices without overlapping). Set the skillet aside.
Combine the flour, baking powder and salt in a bowl; set aside.
Beat the egg yolks at medium speed until they are thick and lemon colored. Gradually add the sugar, continuing to beat. Add the flour mixture to the yolk mixture, and stir in the reserved pineapple juice.
Beat the egg whites until stiff peaks form. Fold the whites into the cake batter. Pour or spoon the batter evenly over the pineapple slices.
Bake at 350°F for 40 to 45 minutes. Cool the cake in the skillet for 30 minutes; then invert it onto a serving plate. Place a maraschino cherry in the center of each pineapple ring.

PINEAPPLE UPSIDE DOWN CAKE

Place the butter and brown sugar in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch.
1 can pineapple slices
maraschino cherries (enough to fill centers of pineapples)
Place pineapples in the butter and sugar mixture. Put cherries in the center of the pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge).
Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below).
Pour the batter over the pineapple and cherries.
Bake at 350°F degrees. When the cake is done, loosen the edges with a butter knife. Remove from heat and allow to sit five minutes, then turn it upside down on a serving dish.
Optional: Instead of using a cake mix, you can prepare the batter from scratch using the recipe below, or any recipe for yellow cake.
Scratch Cake:
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
2/3 cup sugar
1/4 cup milk
Combine ingredients and beat 1 minute. Pour batter over pineapples and cherries (same as above). Bake at 350°F and follow same steps as above.
FRESH APPLE UPSIDE DOWN CAKE
1 pkg. yellow cake mix
3 apples, peeled and sliced thin
2 tbsp. cinnamon
1/2 tsp. nutmeg
1/2 cube butter
1 c. chopped pecans
3/4 c. brown sugar
3 tbsp. Red Hots candies
1. Pour melted butter in rectangle baking dish. 2. Toss apples with cinnamon and nutmeg, coating evenly. 3. Spread red hots evenly over butter in pan. 4. Sprinkle nuts, then apples, then all of the brown sugar over apples. 5. Prepare cake batter as per package instructions.
6. Gently....Pour batter over apple mixture. 7. Bake in preheated oven at 350 degrees for 30 to 45 minutes or until done when tested. 8. Remove from oven, set for 5 minutes only, then invert on serving plate, carefully. 9. I have also used a spice cake mix and a strawberry cake mix.

A real simple recipe is to get a yellow cake mix,canned pineapple,butter and brown sugar. Marachino cherries are optional. I put a stick of butter in the pan you are going to use and place in oven to melt. When melted,take out and add around a cup of brown sugar. Just mix it in butter. Place pineapple rings on top of sugar mix and place cherries in center of rings if you used them. Then pour cake mix over and bake at 350 till done. Just mix cake mix as per package instructions. I use the juice from the canned pineapple in place of the water though. Makes the cake more moist to me. When done,invert on serving plate as soon as taken from oven. I think I am going to make this myself tonight,thanks for the suggestion. HmmHmm good.

You can use boxed yellow cake and follow the directions for that and heat some butter and brown sugar in a cast iron pan add pineapples and cherries, pour cake mix and bake according to box directions.
